    • Add egg and remove to a floured table to knead and roll out.
    • Line pastry ring with pastry. Use the side of your finger to gently lay the pastry without breaking.
    • Lay cling film flat on a table in several layers and rub to remove air bubbles. Lay on top of the pastry.
    • Add lentils and create a bag using cling film. Overfill the bag to stop the tart shrinking.
    • Bake at 180°C for 20 minutes. Allow the oven to cool, then bake at 150°C for 20 minutes.
    • For the filling: Combine egg yolks, eggs and cream.
    • Add sugar, slowly add cream, then carefully add lemon juice.
    • Pass and fill the pastry base.
    • Cook for 20 minutes at 130°C.
    • Check the tart is cooked, not runny, and allow to cool.
    • Before serving, portion and either add Italian meringue or caramelise with sugar.
