My Delicious Chicken Sekuwa Adventure: A Simple Recipe for Busy Weeknights

As a working mom, time is my most precious commodity. Finding quick, healthy, and delicious meals that the whole family enjoys can feel like a constant juggling act. That's why I'm so excited to share this recipe for Chicken Sekuwa – it's become a staple in our home, a perfect blend of flavorful simplicity and satisfying results. Forget complicated procedures and long cooking times; this dish is easily adaptable to even the busiest schedules, delivering a burst of flavor that's sure to impress.

The beauty of Chicken Sekuwa lies in its versatility. It's incredibly adaptable to different spice preferences and readily available ingredients. I've often found myself adjusting the recipe based on what's fresh in the market or what I have on hand. Sometimes I'll add a little extra chili paste for a spicier kick, other times I'll substitute the Timur pepper for something more readily available in my local grocery store. The core components remain constant – the tender chicken, the vibrant marinade, and the satisfying char from the grill – but the little tweaks allow for endless exploration and personalization.

The marinating process is key. I recommend at least four hours, but honestly, overnight is even better. The flavors really meld and penetrate the chicken, resulting in juicy, tender bites. I usually marinate my chicken in the evening, then let it sit in the refrigerator while I’m busy with other things. By the time dinner comes around, it's ready to be grilled. This is a great way to save time and reduce stress during a hectic week.

Grilling the skewers is straightforward. I personally prefer metal skewers for ease of use and to eliminate the worry of burning. However, if you are using wooden skewers, remember to soak them in water beforehand to prevent them from burning. The grilling process itself is relatively quick; just a few minutes per side until the chicken is cooked through. The result is perfectly charred, juicy chicken that's both visually appealing and incredibly tasty.

This dish isn't just quick and easy, it's incredibly healthy as well. Chicken breast is a great source of lean protein, and the addition of fresh herbs and spices creates a flavour profile that’s vibrant and exciting. My kids love it, and it often gets rave reviews from friends and family. It's become a favorite for casual gatherings, potlucks, and of course, our regular weeknight dinners.

Beyond the simple recipe, Chicken Sekuwa offers something more: a sense of accomplishment in creating something delicious and healthy from scratch. It’s a reminder that even amidst the chaos of daily life, there’s always time to savor good food and enjoy the company of loved ones. So, try out this recipe – I guarantee it will quickly become a regular in your own kitchen, a delicious and reliable solution for busy weeknights and celebratory meals alike. The delightful aroma of grilling chicken, the satisfaction of creating something truly special for your family – those are the things that elevate this dish from simply good to utterly satisfying.

The versatility of this recipe is another thing I appreciate. It's easily customizable to whatever you have on hand. Feeling adventurous? Experiment with different spices or add some vegetables to the skewers for a more complete meal. Feeling pressed for time? Use pre-cut chicken cubes to reduce preparation time even further. Regardless of how you adapt it, Chicken Sekuwa promises delicious results. And that's what truly matters in the end – a tasty and easy meal that the entire family can enjoy.

The final touch, the garnish of fresh cilantro, lemon, and onions, adds a vibrant freshness to the dish, enhancing the already rich flavors. This simple addition elevates the presentation and creates a beautiful contrast in both texture and taste. It’s these small touches, the careful attention to detail, that truly makes a dish shine, turning a simple weeknight meal into something truly special. So grab your ingredients, fire up the grill, and get ready to experience the magic of Chicken Sekuwa – a recipe that's as delicious as it is convenient.

Step-by-step

    • Cut the chicken into medium cube size pieces.
    • For the marinating sauce, blend all the above mentioned ingredients (yogurt, salt, cumin/coriander powder, ginger/garlic paste, turmeric powder, chili paste, fenugreek leaves and Timur) except for lime juice, black pepper and mustard oil.
    • Pour the marinating sauce over the meat and mix it well.
    • Marinate it for at least 4 hours (I let it sit overnight if I have time and patience).
    • Add the black pepper, lime juice and mustard oil when the meat is ready to be grilled.
    • If you are using wooden skewers, soak them in water for 20 minutes before using them. This will prevent the skewers from burning while on the grill.
    • I prefer using metal skewers because they are easy to use and don't have to worry about them getting burned.
    • Oil your metal skewer and pierce the chicken cubes onto the skewers (shown in above picture), do not tightly pack the chicken cubes. It needs to be cooked evenly.
    • Grill the skewers over medium heat for 5-8 minutes, basting with oil while turning sides.
    • When ready, garnish with some cilantro, lemon, and onions.
