Step-by-step

    • Slice onions thick and then halve. Place along bottom of crock pot to cover.
    • Wash and peel the celery and the carrots. Slice into 1/2 inch pieces and place in crockpot.
    • Wash potatoes thoroughly, slice in half and then slice each half in half to quarter. Place in crock pot.
    • Wash mushrooms gently and remove stem. Slice each cap into 1/2 inch pieces and place together around rim of crockpot.
    • Add minced garlic clove to crockpot.
    • Heat cast iron over high flame until scorching hot. Generously season roast with salt and pepper. Add olive oil to pan. Once heated sear roast 2 mins per side to seal in the juices.
    • While searing the roast, assemble the sauce. Add beef broth, balsamic vinegar, garlic powder, onion powder, oregano, soy sauce and Worcestershire sauce to a bowl and mix well.
    • Once roast is seared, place on top of crock pot and then add sauce to same pan to deglaze, making sure to scrap the pan to loosen all the bits from the roast. Once boiling and you’ve mixed thoroughly, pour sauce over everything in crockpot.
    • Cover and cook on low for 10-12 hours.
