A Delicious Chicken Pie Recipe

My Go-To Comfort Food: A Simple Chicken Pie

As a busy working mom, time is a precious commodity. Weeknights are a whirlwind of homework, school events, and the ever-present struggle to get a healthy and delicious meal on the table. That's why I rely heavily on recipes that are both quick and satisfying. This Chicken Pie with Phyllo pastry has become a staple in my household. It’s surprisingly easy to make, even on a weeknight, and always a crowd-pleaser. The flaky phyllo pastry contrasts beautifully with the creamy, savory chicken filling, making it a perfect balance of textures and flavors. The aroma alone is enough to bring the family running from the moment it starts baking!

The beauty of this recipe lies in its adaptability. I often adjust it based on what I have on hand. Sometimes I add leftover roasted vegetables for extra nutrition and flavor. Other times, I swap out the feta cheese for a different type of cheese, like parmesan or even some crumbled goat cheese. The possibilities are endless! The key is to not be afraid to experiment and make it your own. Don't be intimidated by the phyllo pastry either - it's easier to work with than you think. A little practice, and you’ll be a phyllo pastry pro in no time!

Beyond the practicality, this chicken pie holds a special place in my heart. It reminds me of cozy evenings spent with my family, sharing stories and laughter over a warm, delicious meal. It's more than just a recipe; it's a tradition. A symbol of comfort, love, and togetherness. It’s the kind of meal that can instantly transport you to a simpler time, where the most important things are good food, good company, and good times. I’ve even started making a smaller version for my lunch at work – a perfect way to enjoy a little taste of home during the workday. It reheats beautifully too!

Tips for Success:

  • Prep Ahead: You can prep the chicken and vegetable filling a day ahead of time, storing it in the refrigerator. This will significantly reduce your cooking time on the day you plan to bake the pie.
  • Don't Overcrowd the Pie: Make sure you don't overfill the pie dish. Leave a little space at the top to allow the filling to cook evenly and prevent it from overflowing.
  • Brush Generously: Don't skimp on the butter when brushing the phyllo pastry. It helps create a beautifully golden-brown crust and adds a lovely richness to the pie.
  • Adjust Seasoning to Taste: Feel free to add more or less of your favorite herbs and spices to customize the flavor profile of your chicken pie.
  • Serve Immediately: This pie is best served immediately after baking while the phyllo pastry is still crisp and the filling is warm. However, any leftovers can be stored in the fridge for a couple of days and reheated.

So, there you have it – my go-to recipe for a quick, delicious, and satisfying chicken pie. I hope you enjoy it as much as I do. It’s the perfect dish for a busy weeknight or a special occasion. Give it a try and let me know what you think! I’d love to hear your own variations and tips!

Happy cooking!

Step-by-step

    • Remove the skin and bones from the chickens and cut into small, bite-size pieces.
    • In a large saucepan, melt half the butter over medium heat. Add the onion and stir through, then add the chicken pieces and stir through again. Remove from the heat.
    • In a deep bowl, lightly beat the eggs, then add the cream, dill and nutmeg to the mixture and combine. Season to taste.
    • Melt the remaining butter over low heat. Brush 4 sheets of phyllo with a little butter and lightly place on top of one another. Line an oven-proof dish with the brushed sheets, sides overlapping on the edges.
    • Spoon the chicken into the phyllo and sprinkle with feta. Top with the egg mixture.
    • Butter the remaining sheets of phyllo and place them on top to cover the chicken. Fold back the overlapping sheets and lightly pinch together the edges.
    • Brush the top with butter and bake for 45 minutes or until golden brown.
