Awesome Low-Calorie Chicken Fingers: A Kid-Friendly Recipe

As a busy mom, finding healthy and delicious meals that my kids will actually eat is a constant challenge. We all know the struggle – the picky eaters, the endless negotiations, the inevitable waste. But I recently discovered a game-changer: these awesome low-calorie chicken fingers. They're not only a healthier alternative to the processed stuff, but they also involve my kids in the cooking process, making mealtime a fun family affair.

The secret lies in a simple twist on a classic recipe. I've managed to reduce the calories and eliminate some of the unhealthy ingredients often found in store-bought chicken fingers, without sacrificing flavor or that satisfying crunch. Honestly, the best part is seeing my kids' faces light up when they get to help. It’s a win-win; they’re actively involved in preparing their dinner, leading to increased appreciation for the food and, surprisingly, they actually *eat* their veggies better afterward.

This recipe is incredibly versatile; you can experiment with different types of cereal for unique flavor profiles. I've used rice Chex in my version, but you can use corn Chex, or even try other similar cereals for a different texture and taste. This recipe is so easy, my little ones have no trouble following the steps. It's a great way to introduce them to basic cooking skills and foster a love for healthy food early on. The simple act of pounding the cereal in a bag is not only entertaining, but provides a wonderful sensory experience.

The key is the buttermilk marinade; it keeps the chicken incredibly juicy and tender. Plus, it's a perfect way to ensure the chicken absorbs the flavor of the seasoned cereal coating. And the best part? Minimal cleanup! The non-stick baking sheet makes washing up quick and easy, leaving more time for family bonding. This dish isn't just about feeding my family; it's about creating happy memories around the dinner table. It is a treasured ritual in our family. My kids feel empowered and proud of the meal we share, and that feeling is truly invaluable.

Beyond the benefits of getting my children involved in the process, this recipe also has a huge health advantage. Knowing exactly what goes into our food brings me peace of mind; I control the level of salt, sugar and unhealthy fats. These low calorie chicken fingers are a perfect option for a healthy weeknight meal or even a fun weekend activity. It’s versatile enough to serve with a simple side salad, some roasted vegetables or even mashed sweet potatoes.

But beyond the healthy aspects, and beyond the fun of involving my kids, it's about the joy of family meals. There's something special about gathering around the table, sharing stories and laughter over a home-cooked meal. This recipe has become a staple in our home, a constant source of happy mealtimes and happy memories. And, let's be honest, it’s a massive relief to know that I'm serving my kids something they actually enjoy and that's good for them.

This is more than just a recipe; it's a bonding experience, a lesson in healthy eating, and a delicious meal all rolled into one. I encourage you to try it with your family. Let your kids participate in the preparation; it might surprise you how much they love it! And who knows, you might even discover a new family tradition in the process. This chicken finger recipe isn't merely a dish; it's a testament to the simple joys of family life and the deliciousness of home-cooked food, prepared together, shared together. The memories we make while cooking this recipe, and while eating this recipe, are even more valuable than the delicious chicken fingers themselves. Give it a try, I promise you won't regret it!

Step-by-step

    • Preheat oven to 400 degrees
    • For those of you that are new to cooking, whenever you cook with raw chicken, especially when you are around small kids helping in the kitchen, make sure you wash your hands often!! Use a anti-bacterial soap and have your kids wash as often as you do. The best rule of how long to wash for is sing "Happy birthday" while you scrub.
    • Pour 3/4 cup of buttermilk into deep dish.
    • Slice your chicken into about 1/2 inch slices. If it a thick breast, butterfly it to make it easier and faster to cook. (Butterfly means to cut in half, lengthwise). After slicing, place chicken into buttermilk. Salt and pepper lightly. Let marinade in buttermilk for a minimum of 15 minutes.
    • Grab your kid... Hopefully it's the one running around the kitchen. If this is not your child, return it to driveway and find the one that looks similar to yourself. Help them count four cups of Chex cereal, pouring each into a gallon ziploc bag.
    • Have your child beat the cereal into a pulp, make sure all large squares are knocked down. Don't go overboard on this step, you don't want a powder. (By not giving them a rolling pin... it keeps their hands out of trouble for a while).
    • While child is pounding the bag... grab a beer.. enjoy the peace and quiet.
    • Strain the chicken in a colander, dredge each piece individually in cereal mix and place on non-stick or greased cookie sheet.
    • Cook for 8 to 9 minutes.
    • Serve and enjoy!
