Step-by-step

    • Remove the casings from the sausage and brown the sausage in a pan over medium heat until it is crumbly.
    • Remove the sausage from the pan and set aside.
    • Add the onion and garlic to the pan and cook until they are softened.
    • Add the broth, water, wine (if using), carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage to the pan.
    • Bring the mixture to a boil, then reduce heat and simmer uncovered for 30 minutes.
    • Add the zucchini, green peppers, parsley, and tortellini to the pan.
    • Simmer for another 25 minutes, covered, for fresh tortellini, or 45 minutes, covered, for frozen tortellini.
    • Serve the soup hot with fresh Parmesan cheese sprinkled on top.
