My Easy Pozole Recipe: A Family Favorite

As a busy mom, I'm always on the lookout for recipes that are both delicious and easy to make. This pozole recipe has become a staple in our household, a crowd-pleaser that's quick enough for a weeknight dinner yet satisfying enough for a weekend gathering. The rich, savory broth, tender pork, and hearty hominy are simply irresistible. It's the kind of dish that warms you from the inside out, perfect for chilly evenings or a comforting meal after a long day. And the best part? It's surprisingly simple to prepare!

I remember the first time I made pozole. I was a little intimidated by the seemingly long list of ingredients and steps. But once I started, I realized how straightforward it actually is. The most time-consuming part is the simmering of the pork, but even that's manageable if you plan ahead. While the pork is simmering, I usually tackle other household chores, allowing me to multitask and maximize my time. The vibrant flavors that develop during the simmering process are well worth the wait. The aroma alone fills the kitchen with a sense of warmth and anticipation.

One of the things I love about this pozole recipe is its adaptability. You can easily adjust the spice level to your preference. If you prefer a milder pozole, remove the seeds from the chiles before blending. For a spicier kick, leave them in! I also like to experiment with different garnishes. Shredded cabbage and radishes are classics, but you can also add chopped cilantro, avocado slices, or a squeeze of lime juice. The possibilities are endless! Serving this pozole with warm tortillas makes it even more complete and satisfying.

Over time, this recipe has evolved to become a treasured family tradition. It's a dish that brings us together, sharing stories and laughter around the table. The simple act of gathering around a bowl of steaming pozole creates a sense of connection and belonging. It’s more than just a meal; it’s an experience, a memory in the making.

I encourage you to try this recipe and make it your own. Don’t be afraid to experiment with different ingredients and seasonings. The beauty of cooking is in its ability to bring people together and create something special. Share this recipe with your loved ones and create your own pozole traditions. Tips and Variations:

  • For a vegetarian version, substitute the pork with hearty vegetables like butternut squash or sweet potatoes.
  • Add other beans, such as pinto beans or black beans, for a heartier pozole.
  • Experiment with different types of chiles for varying levels of heat and flavor.
  • Garnish with your favorite toppings, such as shredded cheese, sour cream, or a fried egg.
  • Make it ahead of time! Pozole tastes even better the next day.

This Easy Pozole recipe is more than just a meal; it's a testament to the power of simple ingredients and a little bit of love, transforming a routine weeknight dinner into a memorable family experience.

Enjoy!

Step-by-step

    • In a stock pot, bring 7 cups of water to a boil.
    • Cut up your pork loin into cubes and put it in the pot.
    • Add the onion, 3 cloves of garlic, the Knorr bouillon, and some salt.
    • Cover and let boil for around 2 hours (I always cook mine on high).
    • Add 3 cups of water to a saucepan and bring to a boil.
    • Put in the chiles and the remaining garlic.
    • Boil for about 20 minutes.
    • Keep the juice that's made and put it into a blender along with the chiles and garlic. (You can also devein and take the seeds out of the chiles for less heat).
    • Make it a puree.
    • In a frying pan, heat up your corn oil.
    • Carefully pour in your puree and let that fry for about 10 minutes.
    • Take out the onion from the stock pot and discard it.
    • Add the puree into the stock pot with the pork.
    • Add the can of hominy and cook for about 45 minutes.
    • Eat!
