Ingredients You'll Need:

  • 1 package taco seasoning mix
  • 2 pounds ground beef
  • 1 can diced tomatoes
  • 1 can ranch style beans
  • 1 can whole kernel corn
  • 1 can pinto beans with jalapeno
  • 1 small can diced/chopped green chilies
  • 1 package original hidden valley ranch dressing mix
  • 1.5 cans water (I use the ranch style bean can and 1/2 the tomato can)
  • 1 small yellow onion, chopped or blended

Enjoy the process of creating this delicious and heartwarming meal! Remember, cooking should be fun and enjoyable. So relax, have fun with it, and savor the delicious results.

Step-by-step

    • Before you start- if you have picky eaters that do not like "chunks" in their soup, I would blend the tomatoes, green chilies, jalapenos, and the onion. You can blend all together, EXCEPT the onion.
    • To start- brown ground beef with the onion in a large 6 quart pot.
    • Add ALL of the listed ingredients after the meat is cooked into the pot. Let the pot simmer on the lowest setting for about an hour.
    • Important: Do not add salt or any seasonings. Do not drain canned goods.
    • After the hour is up, you can serve with tortilla chips in a bowl and shredded cheddar cheese on top. This soup is also amazing to freeze in containers and easily reheats at later dates.
