Step-by-step

    • Prepare wild rice according to package instructions.
    • Sauté onions in butter.
    • Combine flour, salt, and pepper.
    • The 2 cups of liquid can be a combo of chicken broth, milk, white wine, or add a little white wine to the combo - combine all above with 1/2 cup pimento & 1/2 cup parsley.
    • Combine rice & sauce with 1/3 or 1/2 cup parsley or pimento (or 1/2 of each).
    • Add olives (optional) and chicken.
    • Either mix in the slivered or sliced almonds or use sliced almonds on the top.
    • Mix and bake in a 2-quart casserole. Bake at 350°F (175°C) for 30 minutes.
    • May be prepared ahead & baked later.
