Ingredients:

  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1/2 teaspoon crushed red pepper
  • 1 teaspoon black pepper
  • 3 tablespoons lemon juice
  • 1 cup parmesan cheese, grated
  • 1 cup olive oil
  • 1 lemon, juiced
  • 1/2 onion, chopped
  • 2 tablespoons white wine
  • 3 tablespoons Italian parsley, chopped
  • 1 dozen clams for stuffing (24 clams)
  • 1 pound clam meat, chopped
  • 1/2 pound mushrooms, chopped
  • 1 cup bread crumbs (or enough to hold mixture together)

Step-by-step

    • Steam clams to open, scrape out clams. Chop and set aside. Wash shells.
    • Heat olive oil, add garlic, onion, mushrooms and parsley. Add bread crumbs, cheese, clams, clam juice, lemon juice, black and red pepper, wine. Mix together and stuff half shells with mixture.
    • Melt butter with lemon juice and white wine and sprinkle over clams.
    • Bake covered in 350 degree oven for 10 minutes. Then broil 5 minutes until lightly browned.
