It's quick, easy, and unbelievably flavorful – a true family favorite that even my picky eaters gobble up.

The story behind this dish is a happy accident. I first tasted something similar at a restaurant during a family trip to Florida. The rich, creamy sauce, the tender chicken, and the perfectly cooked pasta – it was love at first bite. Naturally, I had to recreate it at home, tweaking the recipe until it became the perfect balance of savory and satisfying. My kids adore this pasta, often requesting it as their "go-to" meal. It's become a staple in our weeknight dinner rotation. The vibrant colors and aromas alone make it a feast for the eyes before it even reaches the table. I love the versatility of this dish, too. It’s easy to adapt to whatever ingredients I have on hand. Sometimes I add extra vegetables, other times I swap the chicken for shrimp or sausage. The possibilities are endless!

Step-by-step

    • Bring a large pot of lightly salted water to a boil. Add penne pasta, and cook until al dente; drain.
    • Meanwhile, place chicken and Bayou Blast seasoning in a bowl, and toss to coat.
    • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 2 to 3 minutes per side. Remove from skillet and set aside. Add to the skillet the green and red bell peppers, mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with a little more Bayou Blast and heat through. (If sauce is too thick add a little milk).
    • Toss pasta with the sauce. Plate the pasta and place 2 chicken tenders on top. Sprinkle with grated Parmesan cheese, serve and enjoy!
