My Perfect Instant Pot Egg Bites: A Busy Woman's Breakfast Solution

Mornings are hectic. Between getting the kids ready for school, rushing to work, and trying to squeeze in a workout, finding time for a healthy and delicious breakfast often feels impossible. I used to grab whatever was quickest – often a sugary pastry or something equally unhealthy – leaving me feeling sluggish and craving a real meal by mid-morning. But then I discovered the magic of Instant Pot egg bites. These little protein powerhouses are a game-changer, allowing me to prepare a week's worth of breakfasts in just minutes. No more frantic morning scrambles!

The beauty of this recipe is its versatility. I’ve experimented with countless variations, swapping bacon for sausage or ham, and using different cheeses depending on my mood and what’s in the fridge. I prefer cream cheese for its rich, creamy texture, but cottage cheese is a great option if you're looking for a lighter bite. Feel free to add your favorite veggies – chopped spinach, bell peppers, or even a sprinkle of hot sauce for a kick. The possibilities are endless!

These egg bites aren’t just convenient; they're nutritious too. Packed with protein, they keep me feeling full and energized throughout the morning. I also love that they're incredibly portable. I simply grab a container from the fridge and head out the door. No more searching for a healthy breakfast option on the go. These egg bites aren't just limited to breakfast. They're perfect for a quick and healthy lunch or even a satisfying afternoon snack. They’re also great for meal prep; I usually make a large batch on the weekend to have on hand for busy weekdays. The versatility of this recipe truly makes it a staple in my weekly meal plan.

Tips and Tricks for Perfect Egg Bites:

  • Don't overfill the jars: Leave a little space at the top to allow for expansion during cooking.
  • Experiment with flavors: Add your favorite vegetables, herbs, or spices for a unique twist.
  • Proper reheating: For best results, reheat in the microwave for 45 seconds.
  • Storage: Store leftover egg bites in the refrigerator for up to a week.

This simple recipe has revolutionized my mornings. From a busy professional juggling work and family to a woman who values her health and well-being, these egg bites offer a delicious and efficient way to ensure a healthy and happy start to the day. Trust me, once you try these, they will become a regular in your kitchen!

Step-by-step

    • Put 1 cup of water in the bottom of your Instant Pot with the trivet.
    • Lightly spray 5 or 6 eight ounce mason jars (or similar silicon muffin cups, etc.) and add the crumbled bacon, sausage or ham and any other additions like green onions.
    • Add the eggs, cheese, cream or cottage cheese, milk and salt to a blender, bullet or other and blend until smooth- about 20 seconds. Include the hot sauce if you like.
    • Divvy the egg mixture evenly into the 5 or 6 mason jars.
    • Cover each mason jar loosely with foil (I use one larger piece over all of the jars when doing 4 or more) and place gently in the Instant Pot. Careful if using the stock trivet as the mason jars may want to tip over.
    • Place the cover on the Instant Pot and select "Steam" and set to 8 Minutes.
    • Natural pressure release (NPR) for 10 minutes and then quick release (QR) the rest.
    • The egg may have expanded above the jars. Allow the jars to cool in the pot for a few minutes until the eggs contract back into the jars.
    • For those you are keeping for later, allow to cool and add a lid. The egg bites should be good for about a week and 45 seconds in my microwave is perfect for reheating.
