Creamy Chicken and Tortellini Soup: A Comforting Culinary Journey

As a busy working mom, finding time to cook delicious, nourishing meals can feel like a constant juggling act. Weeknights are often a whirlwind of homework help, school events, and the never-ending cycle of laundry. But even amidst the chaos, I crave those moments of warmth and comfort that a hearty bowl of soup can provide. That's why this Creamy Chicken and Tortellini Soup has become a staple in my household – it's quick, satisfying, and surprisingly elegant, perfect for a weeknight dinner or a cozy weekend lunch.

The beauty of this recipe lies in its simplicity. It's not just about throwing ingredients together; it's about the process, the gentle simmering of vegetables, the creation of a velvety smooth sauce, and the satisfying blend of textures and flavors. The aroma alone is enough to transform any stressful evening into a moment of peaceful anticipation. The rich chicken broth, combined with the creamy texture and the delicate taste of fresh tortellini, creates a symphony of flavors that leaves you feeling both nourished and content. Each spoonful is a little escape, a moment of quiet indulgence amidst the busy hum of everyday life. I find myself making extra portions to enjoy for lunch the next day, a perfect reminder of the comforting flavors of home. The soup is wonderfully adaptable too – feel free to add in extra vegetables you have on hand, or swap the chicken for turkey or even some leftover roast. It’s a blank canvas for your culinary creativity!

Beyond its convenience, this soup also embodies my philosophy on healthy eating. It's a balanced meal, packed with protein from the chicken, and plenty of veggies to give you a good dose of vitamins and fiber. The creamy texture comes from the simple roux, a classic technique that elevates the soup's richness without resorting to heavy cream or excessive fat. The fresh thyme adds a subtle touch of herbal freshness, balancing the richness of the chicken and the subtle sweetness of the vegetables. It’s a dish that truly nourishes the body and soul. I often find myself thinking back to those evenings when the entire family sits around the table, enjoying this comforting soup, creating memories and connecting with one another in a way only simple things can. In the end, it is not simply a meal, but a cornerstone of our family’s tradition, a reminder that even in the midst of our busy lives, it's the simple things, the simple pleasures, that bring us together. For me, that simple pleasure is the taste of my comforting creamy chicken and tortellini soup.

This soup recipe is more than just a dish; it’s a reflection of my life as a working mom – a testament to the fact that you can have both delicious food and cherished family moments, even with a packed schedule. I hope this recipe inspires you to create your own moments of culinary joy, even amidst the daily grind. Remember to enjoy the process and savor the taste – you deserve it!

Tips and variations:

  • For a vegetarian option, substitute the chicken with roasted vegetables such as butternut squash or chickpeas.
  • Add a pinch of red pepper flakes for a little heat.
  • Use different types of tortellini – cheese, spinach and ricotta, or even meat tortellini, depending on your preference.
  • Garnish with fresh parsley or chives before serving.
  • For a thicker soup, you can add a tablespoon of cornstarch or arrowroot powder mixed with a little cold water to the sauce before adding the tortellini.

I encourage you to experiment and make this recipe your own. Cooking should be a fun and creative process, not a chore. Let this Creamy Chicken and Tortellini Soup be your starting point for creating many more delicious and comforting meals for yourself and your loved ones.

Step-by-step

    • Add the carrots, potatoes, celery, salt, pepper, thyme and stock to a large saucepan.
    • Bring to the boil and allow to simmer for 15 minutes and then turn off the heat.
    • Take another large saucepan and add in the butter and onions.
    • Heat on medium and cook the onion for about 5-6 minutes until soft.
    • Add in the flour and mix it into the onions and butter using a balloon whisk. It should form into a creamy paste (or roux).
    • Allow the roux to cook for a minute whilst stirring with your whisk, then add in a ladle of the stock from the chicken broth (try to get mostly stock - not the veggies).
    • Stir the broth into the mixture using your whisk.
    • Repeat this until you have ladled out most of the stock from the veggie pan (leaving the veggies behind).
    • Then pour in the milk.
    • Heat through whilst stirring with the whisk. The sauce should thicken slightly as it's heating.
    • Once the sauce is almost at boiling (don't let it boil) add in the veggies and the shredded cooked chicken.
    • Bring back to almost boiling and add in half the lemon juice.
    • Give it a stir and taste. Add the rest of the lemon juice if needed.
    • Add the fresh tortellini and heat through for 2-5 minutes (depending on the size of the tortellini) until hot inside.
    • Season with salt and pepper and sprinkle on some fresh thyme, then serve.
