Gooey Goodness: Raw Brownies
These brownies are not only better than any traditional brownies youve tried, but they are extremely healthy! They are loaded with healthy Omega 3s and medium chain triglycerides, as well as fiber. With the hit of honey and cacao, they are a perfect food for pre-workout energy. The recipe says it serves 12 because you can divide them into 12 brownies. In reality, in my house it serves 2. I get two before Antonio disappears with the pan. So if youre sharing, make sure to keep a reserve secret stash in the freezer if you want to have any more than a taste before they are gone!

Gooey Goodness: Raw Brownies - A Busy Mom's Secret Weapon

Let me tell you a story about brownies. Not just any brownies, but raw brownies. The kind that disappear faster than you can say "chocolate." These aren't your average, run-of-the-mill baked goods. Oh no, these are superfood powerhouses, packed with healthy fats, fiber, and just enough sweetness to satisfy that chocolate craving without the guilt. I discovered this recipe a few years ago, and it's become a staple in our house (or, let's be honest, my house, before my family gets their hands on them!).

As a busy mom of three, juggling work, school runs, and everything in between, finding time to bake is a luxury. That's why I love this recipe. It's quick, easy, and requires no oven! The best part? They're ridiculously delicious. Seriously, even my husband, a self-proclaimed brownie aficionado, prefers these to any bakery brownie he's ever tasted. And the kids? Don't even get me started. They think they're getting a treat, but secretly, I know they're getting a healthy dose of omega-3s and fiber. It's a win-win!

The process is surprisingly straightforward. You'll need a food processor to blend the ingredients, which makes the entire process a breeze. The ingredients themselves are simple: dates, nuts, cacao powder, coconut oil, and honey. I use organic ingredients whenever possible, not only for the taste but for the peace of mind knowing I'm feeding my family the best quality food. The recipe makes a small batch (which is perfect for a family of four, or a quick treat for myself!), but it's easily doubled or tripled if you’re hosting a gathering. Just be warned: they might not last long!

The Secret to Success (and Survival): The recipe suggests serving size is 12, but in my household, it's more like 2. Seriously! My husband, Antonio, has a serious brownie addiction, and he's a ninja at finding the hidden stash. My recommendation? Keep a secret supply hidden in the freezer. You’ll thank me later.

These brownies aren't just for busy moms. They're perfect for anyone who wants a healthy and delicious treat without the fuss. Whether you're a fitness enthusiast, a busy professional, or simply someone who loves a good chocolate fix, these raw brownies are a game-changer. They're so easy to whip up, yet they taste so decadent that you'll forget they're good for you.

So, next time you're craving a chocolate indulgence, skip the store-bought treats and give this recipe a try. You'll be amazed at how easy and rewarding it is to make healthy, delicious desserts that the whole family will love. Trust me, you won't regret it! And remember, hide some in the freezer. You need to save some for yourself too!

Ingredients:

  • 1 cup raw almonds
  • 1 cup raw walnuts (divided, plus more for topping)
  • 2 1/2 cups pitted dates
  • 3/4 cup organic unsweetened cacao powder
  • 1/4 teaspoon fine sea salt
  • 1 cup organic coconut oil
  • 1 cup raw, unpasteurized honey

Enjoy the Gooey Goodness!

Step-by-step

    • Place 1 cup walnuts and almonds in food processor and process until finely ground.
    • Add the cacao powder and sea salt and pulse to combine.
    • Add the dates to the food processor a bit at a time and process until the mixture is well blended and becomes sticky when squeezed in your hand. You may not need all the dates.
    • Add the brownie mixture to a small parchment lined 8x8 dish then add remaining 1/2 cup roughly roughly chopped walnuts and mix with your hands to combine and evenly distribute. Then press the mixture down with your hands until it's flat and even.
    • FOR THE FROSTING: Melt the honey and coconut oil in double boiler or over low heat, constantly stirring.
    • Add the cacao powder and stir until completely smooth and silky.
    • Remove pan from heat and pour the mixture over the brownies.
    • Place in freezer to chill and set. I leave mine a few hours but I really don't know how long it takes to set. Don't tell anyone you made them or they won't get a chance to set. Antonio will eat it with a spoon!
    • When it has set, remove it from the freezer and let it sit for a few minutes before cutting it into squares.
    • Store them just like that in the freezer. The frosting melts at room temp. You can make a coconut-butter cream frosting if you prefer to be able to serve them at room temp for parties, but this is not as healthy and both taste equally delish!
