A Weeknight Wonder: Baked Chicken with Tomatoes, Olives, and Capers

Life as a working mom is a whirlwind. Between early mornings, school drop-offs, demanding deadlines at the office, and evening homework sessions, finding time for a delicious, home-cooked meal often feels like an impossible feat. But this baked chicken recipe is my secret weapon – a simple, flavorful dish that's surprisingly quick to prepare and even easier to clean up. It’s become a staple in our family, a reliable go-to when time is short but a satisfying meal is essential.

The beauty of this recipe lies in its adaptability. I often adjust it based on what’s in my fridge or what my family is craving. Sometimes I add a sprinkle of red pepper flakes for a touch of heat, or I swap the Kalamata olives for Castelvetrano for a milder flavor. The ingredients themselves are pantry staples – easily accessible and relatively inexpensive. No exotic ingredients needed here, just a simple combination of familiar flavors that always deliver.

The process is remarkably straightforward. While the chicken is baking, I can catch up on emails, help the kids with their homework, or simply enjoy a quiet moment with a cup of tea. The aroma that fills the kitchen during cooking is heavenly; a comforting blend of herbs, garlic, and roasted tomatoes. It’s a testament to the magic that unfolds when simple ingredients are treated with care and attention. The result is a dish that’s both nourishing and satisfying – exactly what a busy mom needs after a long day.

Beyond the Dinner Table: This dish is more than just a quick weeknight dinner. It’s a testament to the power of simple cooking, proving that delicious meals don't have to be complicated. The leftovers are equally delightful, perfect for a quick lunch the following day. I often pack some in my work lunch bag, enjoying a taste of home amidst the hustle and bustle of the office. It's a reminder that even amidst the chaos of daily life, there's always time to nourish ourselves and our families with delicious, home-cooked meals.

This recipe isn't just about the food itself; it’s about the moments it creates. The shared meal at the dinner table, the aroma filling the kitchen, the comforting feeling of a home-cooked meal – these are the things that truly matter. It's a small act of love, a simple gesture that reminds us of the importance of family, connection, and good food. This chicken recipe, seemingly ordinary, somehow encapsulates that sentiment. It's a reminder that even amidst the chaos of daily life, finding time to make simple, nourishing meals can significantly improve our day and strengthen the bonds we share with our loved ones.

Serving Suggestions: Serve this baked chicken with a side of roasted vegetables, a simple green salad, or crusty bread for soaking up those delicious juices. It pairs perfectly with a crisp white wine or a light-bodied red. This dish offers an easy, accessible way to enjoy quality time around the table with your loved ones.

Adapting to Your Lifestyle: The great thing about this recipe is its flexibility. If you're short on time, you can use pre-cut vegetables or even pre-cooked chicken. You can easily adjust the herbs and spices to suit your preferences. Feel free to experiment with different types of olives, tomatoes, or even add other vegetables like zucchini or bell peppers. The possibilities are endless!

Ultimately, this is a recipe that is as much about creating memories as it is about creating a delicious meal. It’s a reminder to slow down, appreciate the simple things in life, and cherish those moments spent around the dinner table with the people we love. The aroma, the flavors, the simplicity – it’s all a part of the magic that makes this baked chicken so special, and so much more than just a dinner.

Step-by-step

    • Preheat the oven to 400 degrees.
    • Pat the chicken dry and season with black pepper.
    • Dredge in flour, shaking off any excess.
    • In a 12-inch ovenproof skillet or Dutch oven, heat 1 Tablespoon of the olive oil over medium heat.
    • Add the chicken pieces in one layer and brown on both sides.
    • Transfer to a plate and reserve.
    • If the pan looks dry, add a little oil. If it looks like there’s more than 2 Tablespoons oil, drain a bit off.
    • Add the onions, cook over medium heat, stirring occasionally, until softened and lightly browned.
    • Add the garlic and sea salt and cook until fragrant, about 1 minute.
    • Add the tomatoes, white wine, stock and cook, scraping any brown bits on bottom of the pan.
    • Arrange the thyme, olives and capers over the onion mixture.
    • Place the browned chicken pieces side by side on top.
    • Bring the mixture to a simmer.
    • Cover and place in the oven.
    • After 15 minutes, baste the chicken with the juices in the pot.
    • Continue cooking, uncovered, for an additional 30-40 minutes (depending on thickness), basting every 10 minutes if you have time.
    • Sprinkle with parsley and serve. (You can also cook covered on the stove over low heat for 30 minutes.)
