Vegan/Vegetarian Sausage Patties

Vegan/Vegetarian Sausage Patties
This is modified from a recipe online, which has some lovely step-by-step photos. My meat-eating husband said, "In some ways I like these better than real sausage." They definitely wouldn't fool anybody, but they will satisfy any craving you may have for breakfast sausage without harming pigs or raising your cholesterol, and they taste MUCH, MUCH better than any vegetarian sausages you can buy in the freezer of your health food store. Enjoy with hash browns, fruit, and a vegan breakfast feast! You might want to double the recipe, though.

My Unexpected Love Affair with Vegan Sausage Patties

Let me tell you a story. A story not of grand adventures or daring escapades, but of a simple, humble, and surprisingly delicious vegan sausage patty. It all started, as many culinary adventures do, with a craving. I wasn’t looking for anything fancy, just a hearty, satisfying breakfast to kickstart my day. But the usual suspects – the frozen vegetarian sausages – just weren’t cutting it. They lacked that certain something, that savory depth of flavor that truly satisfied.

That's when I stumbled across a recipe online (I've lost the original link, unfortunately!). It promised vegan sausage patties that would rival the real thing, and after a quick scan of the ingredient list – things I mostly already had in my pantry – I decided to give it a shot. My skepticism was high. I’m not a vegan myself, and my husband, well, he's a self-proclaimed carnivore. But the recipe sounded promising, and the photos online were mouthwatering, so I bravely embarked on this culinary experiment.

The process itself was straightforward, a surprisingly satisfying blend of mixing, stirring, and shaping. I must admit, the initial result was a little underwhelming. These weren't going to fool anyone into thinking they were actual sausage patties. But the aroma as they sizzled in the pan… that was a whole different story. A rich, savory smell filled the kitchen, hinting at the deliciousness to come. And the first bite? That's when my skepticism vanished. The patties were surprisingly flavorful, juicy, and satisfying. A perfect blend of savory spices, a hint of sweetness from the maple syrup, and a satisfying textural contrast.

Even my meat-loving husband was impressed. He sampled one, and his reaction surprised me. "In some ways," he declared, "I actually like these better than real sausage!" High praise indeed, coming from him! It wasn't just the flavor. The lack of grease, the ease of cooking – all of it contributed to a vastly improved breakfast experience. We both agreed that these patties surpassed the frozen imitations by a mile. These tasted better, were healthier, and infinitely more satisfying.

Since then, these vegan sausage patties have become a regular fixture in our breakfast rotation. They are easy to make, quick to cook, and incredibly versatile. They’re delicious on their own, paired with hash browns, nestled in a breakfast burrito, or even crumbled over a salad for a surprisingly flavorful lunch. And the best part? I know exactly what ingredients are going into them, ensuring they are not only delicious but healthy as well. It's a win-win situation.

For anyone looking for a delicious, healthy, and surprisingly satisfying vegan breakfast option, I highly recommend giving these sausage patties a try. You might be surprised at just how much you enjoy them. And who knows, you might even convert a meat-lover or two along the way. I know I certainly did!

Step-by-step

    • Stir together textured vegetable protein (TVP) and boiling water and set aside to soak for 5 minutes.
    • Meanwhile, mix flour, flax, bran, and dry spices; stir to incorporate.
    • Stir in TVP.
    • In a measuring cup, measure out water; add liquid smoke directly to the cup and stir, if using (this way the smoke will be evenly distributed).
    • Stir in other liquid ingredients, then add wet to dry; mix well.
    • With your hands, form mixture into 2" balls and flatten slightly into patties.
    • Fry in oil in an uncovered frying pan on medium heat, about 2 minutes per side (or until browned).
    • Freeze leftovers (if you have any) and microwave 1-2 minutes to enjoy on busy weekday mornings.
