A Weeknight Delight: Chicken with Sweet Wine and Garlic

As a busy working mom, finding time to cook a delicious and satisfying dinner can feel like a Herculean task. Between school pick-ups, work deadlines, and the never-ending laundry pile, the last thing I want is to spend hours in the kitchen. That’s why I’m always on the lookout for recipes that are both flavorful and easy to prepare. This Chicken with Sweet Wine and Garlic recipe is a perfect example. It’s elegant enough for a special occasion, yet simple enough for a weeknight meal. The sweet wine adds a depth of flavor that elevates the dish beyond your average chicken dinner, while the garlic provides a satisfyingly pungent aroma that will make your whole house smell divine.

The beauty of this dish lies in its simplicity. The ingredients are readily available, and the cooking process is straightforward. There’s no need for any fancy culinary techniques – just a little bit of patience and attention to detail. I typically prep most of the ingredients while the kids are doing their homework or watching a bit of TV, minimizing kitchen chaos. Once the chicken is browning in the pan, the aroma fills the air, creating a sense of anticipation and excitement for everyone in the family. It's a comforting smell, reminiscent of cozy family dinners and cherished memories. It’s the kind of meal that brings everyone together, fostering conversation and connection over a shared plate of delicious food.

This recipe is so versatile. I’ve experimented with different types of sweet wine, from Sauternes to Riesling, and each time the result is equally delightful. The subtle sweetness of the wine perfectly complements the savory chicken and garlic, creating a harmonious balance of flavors. You can easily adjust the amount of garlic to your liking – if you’re a garlic lover like me, feel free to add a few extra cloves! I also love to serve this dish with a simple side of roasted vegetables or a fresh green salad. The roasted vegetables add a nice textural contrast, while the salad offers a refreshing counterpoint to the rich sauce.

One of my favorite things about this recipe is its adaptability. I often adapt it based on what’s available in my pantry. Sometimes I add a handful of fresh herbs like thyme or rosemary to the sauce for an extra layer of flavor. Other times I swap out the mushrooms for some baby spinach or asparagus. The possibilities are endless! What started as a simple weeknight meal has become a staple in our household, a testament to its ease, versatility, and undeniable deliciousness. It's a recipe that has become a part of our family’s culinary story, a dish that evokes warmth, comfort, and the simple joy of sharing a meal together.

The best part? Cleanup is a breeze! The entire cooking process is done in a couple of pans, minimizing the post-dinner washing-up. As a busy mom, this is a huge bonus! This recipe allows me to create a delicious and satisfying meal without sacrificing precious time or energy. It’s a win-win situation for both me and my family. So, the next time you’re looking for a quick, easy, and incredibly tasty dinner option, give this Chicken with Sweet Wine and Garlic recipe a try. You won’t regret it!

I highly recommend you try this recipe. It’s quick, easy, and the end result is incredibly satisfying. The combination of sweet wine, tender chicken and fragrant garlic is simply irresistible. It’s a dish that’s both impressive and effortlessly chic. Enjoy!

Step-by-step

    • Tip the flour into a large food bag. Add the chicken pieces, two at a time, and shake well to coat evenly.
    • Heat 2 tbsp oil in a large pan, add a few pieces of chicken and fry on all sides until well browned. You’ll need to do this in batches and you may need a touch more oil or fat.
    • Remove the pieces to a large saucepan or flameproof casserole.
    • Add 1 tbsp oil to the pan, add the shallots and fry gently until softened, but not browned.
    • Add the wine and allow to bubble until it is reduced a little.
    • Add the stock, herb bundle and seasoning and bring to the boil.
    • Pour over the chicken.
    • Cover the pan tightly and simmer for 45 mins until the chicken is tender and the sauce thickened and reduced.
    • Meanwhile, separate the garlic head into individual cloves and put in a small pan with water to cover. Bring to the boil, then cover and simmer for 20-25 mins until the garlic is tender.
    • Drain and cool under running cold water. Peel the garlic.
    • Heat half the butter and a splash of oil in a frying pan. Add the mushrooms and cook quickly over a moderate heat until just softened.
    • Tip into a bowl.
    • Wipe out the pan and add the remaining butter and a splash of oil.
    • Add the garlic and fry gently, shaking the pan until lightly browned. Season lightly.
    • Stir the mushrooms and crème fraîche into the chicken and bring to the boil.
    • Simmer for 5 mins, then taste and add more seasoning and a little lemon juice if it needs it.
    • Spoon the chicken and sauce onto a warm platter and scatter with garlic.
