I was major-craving some rice crispy treats today, so I began looking for a healthier version of the traditional recipe. I found some vegan alternative recipes, but none of them seemed just right. So I combined a few different ideas that I found out there and what I came up with turned out to be a delicious treat reminiscent of the traditional Rice Crispy treats that I grew up eating, yet with this new version I didn't have to feel so guilty about eating them. Amazing.

A Healthier Twist on a Childhood Favorite: Apple-Walnut Rice Crispy Treats

As a busy mom, finding time to bake is a luxury, but sometimes the craving for a nostalgic treat hits hard. Rice Krispies Treats were always a favorite of mine growing up, but let's be honest, the original recipe isn't exactly a health food champion. I was determined to find a healthier alternative that still captured that familiar deliciousness without the guilt. After experimenting with various vegan recipes and adapting ideas I found online, I finally created a version I'm absolutely thrilled with – my Apple-Walnut Organic Brown Rice Crisp Treats! This recipe is not only gluten and soy-free but also satisfies that sweet craving without the sugar crash.

The beauty of this recipe lies in its adaptability. Feel free to swap out ingredients to suit your preferences and what you have on hand. Instead of apples and walnuts, consider adding vegan chocolate chips, other dried fruits like cranberries or cherries, or different types of nuts and seeds like pecans or sunflower seeds. The possibilities are endless! The base recipe is wonderfully simple, requiring minimal ingredients and straightforward steps. It's perfect for a quick after-school snack or a delightful dessert to share with family and friends. The combination of crunchy brown rice cereal, sweet apples, and nutty walnuts creates a delightful textural and flavor experience. Each bite is a perfect blend of sweet and crunchy, a satisfying treat that leaves you feeling energized rather than sluggish.

Making these treats is a breeze, even for novice bakers. The process involves melting sugar, corn syrup, and rice milk, then stirring in cashew butter and quickly combining it with the rice cereal. Folding in your chosen additions, pressing the mixture into a pan, and letting it cool (or not, if you're impatient like me!) completes the process. The result is a batch of wholesome, delicious treats that the whole family will enjoy. It’s a testament to the idea that healthy eating doesn’t have to compromise on flavor or satisfaction. In fact, sometimes, a healthier approach unlocks a whole new level of deliciousness!

This recipe has become a staple in my home. It's a simple yet versatile way to satisfy a sweet tooth without feeling guilty. The ease of preparation, the customizable ingredients, and the undeniably delicious result make it a winner in my book. I encourage you to try it and discover your own favorite variations. Step-by-step

    • Before you start making this treat, keep in mind that you can substitute vegan chocolate chips, other dried fruits, or other types of nuts or seeds instead of the apples and walnuts. This is just a starting point, feel free to get as creative as your heart's desire with these.
    • Spray a 9X9 baking dish with nonstick spray and set aside.
    • Put the rice cereal in a large mixing bowl and set aside.
    • In a small saucepan, combine the sugar, corn syrup, and rice milk. Heat over medium-high heat, stirring continuously. When the mixture starts to boil, stop stirring and let it boil for six minutes. Again, no stirring during this time. Watch it closely, it should maintain a rolling, foamy boil.
    • Add the 6 tablespoons of cashew butter to a small bowl and set aside.
    • After the 6 minutes, remove the pan from the heat and immediately add the cashew butter. Stir in until well combined, then quickly drizzle the mixture over the rice cereal, stirring with a large spatula until evenly distributed. Fold in your dried apples and walnuts or any other dried additions.
    • Press your rice mixture evenly into your 9X9 pan. Technically you should let this cool completely before cutting into squares, if you're looking for perfection. But if you are like me and don't want to wait that long to indulge, then you seriously don't have to wait. I think it tastes kinda scrumptious when it's still warm.
