I like to call this "The Worlds Greatest Sandwich". Cooked overnight in a crock pot, the meat is tender, juicy, and messy the way a BBQ sandwich should be. Top it with your favorite cole slaw, and you have one tasty meal. This is South Carolina style BBQ.

My Carolina Pulled Pork Sandwich Adventure

As a busy working mom, finding time to cook delicious and satisfying meals can feel like a monumental task. Weeknights are a whirlwind of school pick-ups, homework help, and the never-ending cycle of laundry. But I refuse to let the pressures of daily life compromise my love of good food. That's why I've become a master of the slow cooker – my secret weapon for creating flavorful and effortless meals.

This Carolina-style pulled pork sandwich recipe is a testament to my slow-cooking mastery. It's a flavorful journey that begins the night before, allowing the tender pork shoulder to soak in a tantalizing blend of spices and tangy vinegar. The aroma that fills my kitchen as the pork simmers is nothing short of magical, promising a delicious reward for a minimal amount of effort. I love the convenience – I can toss everything in the slow cooker before heading to bed, waking up to the comforting scent of a nearly-ready masterpiece.

The beauty of this recipe lies in its simplicity. There's no need for fancy techniques or hours spent slaving over a hot stove. The slow cooker does all the hard work, infusing the pork with incredible flavor while I attend to the other demands of my day. The result is incredibly juicy, tender pork that practically melts in your mouth. I often find myself making a double batch, knowing that leftovers are just as delightful as the first serving, perfect for a quick lunch or a satisfying weeknight dinner.

One of the most satisfying aspects of this recipe is the opportunity for customization. The sweetness of the brown sugar perfectly complements the tangy vinegar, and the subtle heat from the cayenne pepper adds a delightful kick. Feel free to adjust the spice levels to your preference, creating a personalized flavor profile to suit your taste buds. The addition of the perfectly crisp coleslaw provides a delightful contrast in textures and tastes, and the soft, pillowy bun provides the perfect vehicle for this incredible masterpiece.

The versatility of this dish is another huge plus. The pulled pork can be enjoyed in various ways. It's fantastic in sandwiches, of course, but it also shines as a topping for nachos, tacos, or even salads. It's a wonderful option for potlucks, picnics, or any occasion where you want to impress your guests with a flavorful and impressive dish that requires minimal effort.

But for me, the ultimate experience is the classic pulled pork sandwich. The tender, juicy pork, the tangy barbecue sauce, the crisp coleslaw, and the soft bun all come together in a harmonious symphony of flavors and textures. It's a meal that brings back fond memories of summer picnics and backyard barbecues. It's a taste of home, comfort, and deliciousness.

So, my fellow busy moms (and everyone else!), give this recipe a try. It's a delicious and easy way to add some joy and satisfaction to your week. The slow cooker will become your new best friend, and you'll wonder how you ever lived without it. Trust me; this recipe will quickly become a staple in your household, a go-to meal whenever you need a quick, easy, and incredibly satisfying dinner that will leave everyone happy and full. Step-by-step

    • Place the quartered onions in a crock pot.
    • Combine brown sugar, paprika, salt and pepper: rub over the roast.
    • Place the roast over the onions in the crock pot.
    • Combine the vinegar, Worcestershire Sauce, red pepper flakes, sugar, mustard, garlic salt and cayenne; stir to mix well.
    • Drizzle about 1/2 of the vinegar mixture over the roast and cover.
    • Refrigerate the remaining vinegar mixture.
    • Cook on low for 8 hours.
    • Drizzle the other half of the vinegar mixture over the roast during the last 1/2 hour of cooking.
    • While the meat is cooking, prepare the barbecue sauce. Mix all ingredients except soy sauce, butter and smoke.
    • Simmer, uncovered, on low heat for 30 minutes.
    • Stir in the remaining ingredients and simmer, uncovered, for 10 more minutes.
    • Set aside to cool.
    • Remove the meat from the crock pot and allow to rest for at least 15 minutes. (Very important step -- longer is better).
    • Remove the onions and chop to a fine consistency.
    • Pull apart the meat with a couple of forks. Meat should have a shredded look to it.
    • Mix chopped onions and shredded pork along with a little bit of juice from the crock pot to taste.
    • Add sufficient barbecue sauce to the mixture to achieve desired taste. Meat should have distinctive barbecue flavor.
    • To serve, spread barbecue sauce on the bottom of a hearty bun.
    • Put a layer of pulled pork on the bun.
    • Spread barbecue sauce over the meat.
    • Add a layer of your favorite cole slaw on top of the meat.
    • Layer some more barbecue sauce over the cole slaw.
    • Spread the top of the bun with more sauce.
    • Grab a fist full of napkins, and enjoy.
