My Simple, Yet Delicious, White Sauce for Pasta

As a busy working mom, time in the kitchen is a precious commodity. I need recipes that are quick, easy, and most importantly, delicious enough to satisfy my family after a long day. This white sauce recipe fits the bill perfectly. It's incredibly versatile – perfect for pasta, of course, but also a fantastic base for creamy soups, vegetable dishes, or even as a dip for crusty bread. The secret? A little bit of aromatic magic infused right into the milk.

I stumbled upon this technique – simmering cloves and bay leaf in the milk – completely by accident. I was experimenting with different flavors, trying to elevate my simple weeknight pasta dinners beyond the usual jarred sauces. The result was a subtly sweet and savory white sauce that my kids actually asked for seconds of! It’s a far cry from the bland, sometimes chalky, white sauces I’ve encountered in the past.

The beauty of this recipe is its simplicity. There are no complicated techniques or hard-to-find ingredients. Just a few pantry staples, a little bit of patience (the key is to add the milk slowly to prevent lumps!), and you'll have a creamy, flavorful sauce that will transform your pasta night from ordinary to extraordinary. I usually make a double batch on the weekends, storing the extra in the fridge for a quick mid-week meal. It’s a real lifesaver when things get hectic.

Step-by-step

    • For making white sauce, take a small sized onion and insert 5 to 6 cloves into onion.
    • Boil clove inserted onion and a small piece of bay leaf in milk.
    • Onion and bay leaf will infuse a different aromatic taste to the white sauce.
    • Bring the milk to boil over medium flame.
    • In a pan melt butter.
    • Add all purpose flour and stir fry over medium flame.
    • Make sure that flour’s color doesn’t changes. Keep on stirring for 2 to 3 minutes.
    • Remove onion and bay leaf from milk and add milk to the pan and keep on stirring.
    • To avoid formation of lumps add milk in small portion and stir and repeat this process. Do not add milk to flour in one go.
    • Bring the flour and milk mixture to boil, lower the flame.
    • Add oregano (optional), black pepper and salt.
    • I case you are using salted butter, keep the amount of salt low. I have used 2 pinches of salt.
    • Mix well.
    • Let it boil.
    • White sauce is ready to use.
