My Secret to Perfectly Crispy Chunky Chips

As a busy mom, finding time to cook a delicious and satisfying meal can be a challenge. But let me tell you, there's nothing quite like the simple joy of perfectly crispy, chunky chips. They're the ultimate comfort food, perfect for a casual weeknight dinner or a fun get-together with friends. And the best part? They're surprisingly easy to make!

This recipe isn't just about throwing potatoes in the oven; it's about achieving that perfect balance of crispy exterior and fluffy interior. It's about the little tricks that elevate a simple side dish into something truly special. For instance, did you know that adding baking soda to the boiling water helps to create an extra crispy texture? It's a game-changer, trust me! And the cold water rinse after boiling? That's crucial for preventing the chips from becoming soggy.

I've always believed that cooking should be fun and accessible to everyone. It doesn't have to be complicated or time-consuming. This recipe is a testament to that belief. It's quick, easy, and adaptable to your own preferences. Feel free to experiment with different seasonings. Garlic salt, celery salt, or even a sprinkle of parmesan cheese – the possibilities are endless! You can also adjust the thickness of your chips to your liking. Whether you prefer thick, chunky wedges or thinner, crispier fries, this recipe allows for total customization.

One of my favorite things about these chips is their versatility. They're amazing on their own, but they're also a fantastic accompaniment to a variety of dishes. Serve them alongside a juicy burger, a hearty steak, or even a simple salad for a complete and satisfying meal. And don't forget the dipping sauces! Ketchup, mayonnaise, ranch dressing – the choice is yours. Let your creativity run wild and have fun with it!

But it's not just about the taste; it's about the experience. The aroma of those potatoes baking in the oven, the satisfying crunch with each bite, the feeling of connection and shared enjoyment around the dinner table – these are the things that truly make cooking worthwhile. This simple recipe is more than just a way to make crispy chips; it's a way to create moments of happiness and connection.

Beyond the kitchen, I find that cooking is a great way to unwind and de-stress after a long day. The rhythmic chopping, the careful measuring, the gentle stirring – it's a form of meditation. It allows me to focus on the present moment and find peace in the process of creating something delicious. And the best part? I get to share the fruits of my labor with my loved ones, creating memories that will last a lifetime.

So, gather your ingredients, put on some music, and let's make some perfectly crispy, chunky chips! This recipe is a celebration of simple pleasures, a reminder that sometimes the most satisfying meals are the ones that are the easiest to make. It's about taking everyday ingredients and transforming them into something extraordinary, a testament to the power of simple cooking and the joy of sharing a meal with those you love.

I hope this recipe brings as much joy to your kitchen as it does to mine. Happy cooking!

Step-by-step

    • Bring to boil the water and baking soda
    • Add chips and cook for 5min to soften the outside
    • Once water is boiling wait remove from heat and rinse them under cold water
    • Place in a large bowl and toss vigorously with salt to soften the skin
    • Place fries on baking paper on an oven rack which has been greased up with the butter (don't know why they work better on baking paper, they just do)
    • Drizzle with the oil (I sometimes add parmesan too)
    • Bake at 250c for 15min then turn them over and bake for another 10min
