This is our favorite, easy version of beef stroganoff. We serve this over cooked broad egg noodles (I usually use about 3/4 of a package). Enjoy!

My Favorite Comfort Food: Beef Stroganoff

As a busy working mom, finding time to cook a delicious and satisfying meal can sometimes feel like an impossible task. Between juggling work deadlines, school pick-ups, and all the other demands of daily life, whipping up something elaborate just isn't always feasible. That's why I rely on recipes that are both quick and incredibly flavorful, and my Beef Stroganoff definitely fits the bill. It's a dish that's become a family staple, a warm hug on a cold night, and a testament to the fact that simple doesn't have to mean boring.

This recipe is my go-to for busy weeknights. It's surprisingly easy to make, requiring minimal prep time and even less cleanup (a huge plus in my book!). The rich, savory sauce coats tender beef and perfectly cooked egg noodles, creating a dish that’s both comforting and sophisticated. It's the kind of meal that leaves everyone feeling satisfied, from my picky eater to my husband who appreciates a hearty dinner after a long day at the office. What sets this recipe apart from others I've tried is its simplicity – it utilizes readily available ingredients, and the cooking process is straightforward, even for novice cooks.

The aroma alone is enough to make your mouth water. As the beef simmers in its rich broth, the kitchen fills with a comforting scent that's both inviting and irresistible. I love the way the flavors meld together – the earthy mushrooms, the slightly tangy sour cream, and the tender, flavorful beef. It's a true symphony of tastes that always manages to impress my family and any guests I might have. I usually serve this over a generous portion of broad egg noodles, finding the combination of the creamy sauce and the slightly chewy noodles to be utterly delightful.

Beyond the taste, this recipe represents something more to me. It’s a connection to simpler times, a reminder of cozy evenings spent around the dinner table with loved ones. It's a dish that's easy to customize, too. Sometimes, I add a sprinkle of fresh parsley for a pop of color and extra freshness. Other times, I’ll use different mushrooms, like cremini or shiitake, depending on what's available at the market. The beauty of this recipe lies in its flexibility – it’s a blank canvas for your culinary creativity. So whether it's a weeknight dinner or a special occasion, this Beef Stroganoff is always a winner in my book. It’s a dish that consistently delivers on taste, convenience, and satisfaction, making it a true staple in our home.

Tips and Variations:

  • Meat Selection: While I prefer sirloin steak, you can use other cuts of beef, such as tenderloin or even stew beef. Just adjust the cooking time accordingly. Stew beef might require a longer simmering time to become tender.
  • Mushroom Variety: Feel free to experiment with different types of mushrooms. A mix of cremini and shiitake mushrooms would add depth of flavor.
  • Spice Level: Adjust the amount of paprika and pepper to your liking. A pinch of cayenne pepper could add a subtle kick.
  • Garnish Options: Besides chives and parsley, other garnish options include fresh dill, a squeeze of lemon juice, or even a sprinkle of grated Parmesan cheese.
  • Make it Ahead: The stroganoff can be made ahead of time and reheated. The flavors actually deepen overnight, making it even tastier the next day.

This recipe isn't just a meal; it's a story. It's a story of family gatherings, busy weeknights, and the simple joy of sharing a delicious, home-cooked meal. It's a dish that transcends mere sustenance and becomes a symbol of comfort, love, and the heart of home. Give it a try, and I'm confident it will quickly become a favorite in your kitchen, too.

Step-by-step

    • Mix the flour, salt, pepper, and paprika together in a bowl. Toss in the prepared and sliced meat - coat all slices in the flour mixture.
    • Heat oil on med. high heat in a large skillet. Brown the meat. Add in the chopped onion and cook until translucent.
    • Add the condensed consomme with 1/2 Cup water and mushrooms to the meat mixture. Cover, turn the heat to low and simmer for 1 to 2 hours. *The meat gets more tender the longer it cooks.
    • When ready to serve, add the sour cream and mix completely. Wait until the sour cream is heated up and then serve the mixture over your cooked egg noodles. You may garnish with chives and/or parsley and poppyseeds if you like. Enjoy!
