As a busy working mom, finding time to cook a delicious and healthy dinner can feel like a Herculean task. Weeknights are especially challenging, often leaving me scrambling for quick, convenient options that don't compromise on taste or nutrition. That's why I've developed this Midweek Spaghetti recipe – a flavorful, satisfying meal that comes together in under 30 minutes. It's my go-to when I need a comforting dish without spending hours in the kitchen.

The beauty of this recipe lies in its simplicity and adaptability. The vibrant vegetable sauce, made with passata, pureed tomatoes, and a medley of fresh vegetables, is bursting with flavor. The oregano, in particular, adds a depth and complexity that elevates the entire dish. I've found that adding a pinch of sugar balances the acidity of the tomatoes, creating a perfectly harmonious sauce. Feel free to experiment with different vegetables – zucchini, mushrooms, and bell peppers are all fantastic choices, but you can easily substitute others based on your preference and what's in season.

This recipe isn't just about convenience; it's about flexibility too. Want to turn it into a hearty bolognese? Simply add some ground beef or Italian sausage to the sauce. Craving a comforting pasta bake? Pour the sauce over your cooked spaghetti, top with cheese, and bake until bubbly and golden brown. The possibilities are endless, making this recipe a versatile staple in my kitchen. It's perfect for a quick weeknight meal, a casual weekend lunch, or even a light and flavorful dinner party dish.

The combination of rich tomato sauce, tender vegetables, and perfectly cooked pasta creates a symphony of textures and flavors that will satisfy even the most discerning palates. The addition of parmesan and cheddar cheese adds a delightful nutty and mellow finish, further enhancing the overall culinary experience. The simplicity of this dish belies its deliciousness; it's a testament to the fact that sometimes, the most satisfying meals are the easiest to make.

But what truly makes this dish special for me isn't just its ease and adaptability; it's the memories it evokes. The aroma of oregano simmering on the stove transports me back to my grandmother's kitchen, filling the air with warmth and comfort. The simple act of cooking and sharing this meal with my family creates precious moments that are just as important as the meal itself. So, the next time you're short on time but craving a satisfying and flavorful dinner, try this Midweek Spaghetti. You won't be disappointed.

It's more than just a meal; it's a reflection of balance, efficiency, and deliciousness in the midst of a busy life.

Step-by-step

    • Cook your pasta in accordance to its packet and add lots of salt to the water to give it great flavour.
    • Prepare your vegetables. Cook in a pot with some oil for about five minutes.
    • Add the Passata, ketchup and puree to the pot, mixing well. Now add the spices, soya sauce and season well. For me, the oregano makes the dish so I freely add it until the smell is strong of oregano. Add the sugar to counteract the bitterness of the tomato. Turn the heat down to a simmer for about ten minutes or until the vegetables are tender and to your liking.
    • Remove the water from the pasta and add the butter to it.
    • Serve the sauce on top of the pasta. Sprinkle some parmesan for a slight nutty taste and some grated cheddar for a mellow taste. Both cheeses compliment this sauce nicely.
