Baked Pumpkin Spice Doughnuts: A Busy Mom's Delight

As a working mom, time is my most precious commodity. Weekends are for family, not for spending hours in the kitchen. That's why I'm always on the lookout for recipes that are both delicious and quick to make. These baked pumpkin spice doughnuts are my new go-to treat – perfect for a cozy weekend brunch or a satisfying after-school snack for the kids. The best part? They're surprisingly easy to whip up, even on a busy weekday evening.

The aroma of warm pumpkin spice filling my kitchen instantly transports me to a feeling of autumnal coziness. The slightly sweet and subtly spiced doughnuts are a delightful balance of flavors. I love how the moist texture contrasts beautifully with the crisp edges. And the glazes? Oh, the glazes! The rich chocolate glaze is decadent and intensely satisfying, while the maple vanilla glaze offers a lighter, more refreshing alternative, especially when topped with crispy bacon bits (a touch of salty goodness that perfectly complements the sweetness). The beauty of this recipe lies in its versatility. You can easily adjust the sweetness level to your preference, and experiment with different glazes depending on your mood or the occasion.

The recipe itself is straightforward and doesn't require any fancy equipment. A simple blender does the trick for the batter, saving me valuable time and effort. The baking time is surprisingly short, and the cooling process is equally effortless. My kids help me with the glazing part, which turns into a fun family activity. It’s a wonderful way to connect and create memories, transforming a simple baking session into a cherished family moment. The recipe also allows for easy customization. You can adjust the spice levels to suit your taste or experiment with different add-ins. Sometimes I swap the almond and coconut flour for a different mix, depending on what I have on hand. I've found that the flexibility of the recipe makes it perfect for unexpected guests or last-minute dessert cravings. The result is always a crowd-pleaser, and that's what truly matters to me.

More than just a recipe, these baked pumpkin spice doughnuts represent a balance between nourishing my family and savoring those precious moments of togetherness. They're a testament to the fact that delicious treats don't have to be complicated or time-consuming. In a world where time is a luxury, these doughnuts are a simple yet elegant way to add a touch of sweetness and warmth to my family's lives. They are the embodiment of effortless elegance in the kitchen, a delightful culmination of flavor and convenience that leaves everyone feeling satisfied and happy.

These aren't just doughnuts; they're a taste of home, a symbol of shared joy, and a testament to the simple pleasures that make life truly worthwhile. From the initial mixing of the batter to the final lick of the glaze, each step is a reminder of the love and care that goes into creating something special for my family. This recipe is more than just a collection of ingredients and instructions; it's a recipe for happiness, baked to perfection.

The delightful aroma of pumpkin spice wafting through the kitchen as the doughnuts bake is a symphony of autumnal comfort. Each bite is a tiny explosion of flavor – the soft, fluffy texture of the cake, the warm embrace of pumpkin spice, and the delightful sweetness of the glaze. The recipe's adaptability is a godsend for a busy mom like me; I can easily adjust it to suit different dietary needs or preferences. Sometimes, I even get creative and add different spices, creating unique flavor combinations to keep things interesting.

Beyond its deliciousness and simplicity, this recipe holds a special place in my heart. It's a reminder that even amidst the chaos of daily life, there's always time for a little bit of sweetness and connection. These doughnuts are not just a dessert; they're a symbol of my dedication to my family, a testament to the magic that can be created in the simplest of kitchens.

So, if you're looking for a quick, easy, and undeniably delicious treat that will impress your family and friends, give this recipe a try. You won't be disappointed!

Step-by-step

    • Preheat oven to 350 degrees F and oil the insides of your doughnut pan really well. I find palm shortening works best.
    • Place the eggs, coconut milk, pumpkin, maple, coconut oil and vanilla in a blender and blend until frothy, about 15 seconds.
    • Add the dry ingredients, then blend on low for 10 seconds and on high for about 20 seconds. *Lower powered blenders may take a little longer and may also require a few stops and scraping down the sides.
    • Pour the batter into the pan, filling each cavity 2/3 of the way full and bake for 20 minutes.
    • Let them cool for 10 minutes before removing the doughnuts from the pan and cool on a cooling rack.
    • Repeat with your leftover batter.
    • Chocolate Glaze: Whisk all of the ingredients in a shallow bowl until smooth. Dip the top of each doughnut in the chocolate then gently rotate the doughnut to let the excess glaze drip off. Turn right-side up and place back on the cooling rack. Let set for 5 minutes, then refrigerate for 15 minutes until the glaze has hardened.
    • Maple Vanilla Glaze: Melt the cacao butter over a double broiler filled with 1-inch of water. Once it has completely melted, remove it from the heat and whisk in the palm shortening. Add the cold maple syrup and vanilla and whisk until smooth. Dip the doughnuts one at a time, rotating it gently to allow the excess glaze to drip off. Place right-side up on a cooling rack and sprinkle with bacon bits. Allow to sit at room temperature for 5 minutes, then place in the refrigerator for 15-20 minutes until the glaze has hardened.
