A Taste of the Caribbean in My Kitchen: My Caribbean Chicken Stew Adventure

As a busy working mom, finding time to cook elaborate meals can feel like a Herculean task. But there's something deeply satisfying about creating a delicious meal from scratch, especially one that transports you to another place. This Caribbean Chicken Stew recipe has become a staple in my weeknight dinners, and for good reason. It's a vibrant, flavorful dish packed with warmth and the essence of the islands, all while being surprisingly simple to prepare.

The aroma alone is enough to whisk you away to a sun-drenched beach. The tender chicken, infused with the fragrant blend of cilantro, garlic, and thyme, is simply irresistible. The sweetness of the molasses balances beautifully with the heat of the jalapenos, while the creamy coconut milk adds a rich, luxurious texture. Each bite is an explosion of Caribbean flavors, a testament to the power of simple ingredients combined with love and care. The secret to the stew's amazing depth of flavor lies in the careful browning of the chicken and the scraping of the flavorful bits from the bottom of the dutch oven - don't skip this step!

This stew isn’t just a meal; it's an experience. It’s a culinary journey to a tropical paradise, a welcome escape from the everyday grind. I often find myself savoring each spoonful, remembering the warmth of the Caribbean sun and the joy of sharing this dish with my family. The vibrant colors of the stew – from the deep orange of the molasses to the green of the cilantro – are almost as enticing as the flavor itself. I serve mine over fluffy white rice, and garnish with extra cilantro and a sprinkle of diced red pepper for a final touch of visual and taste appeal. It's a perfect weeknight dinner that feels special enough for a weekend celebration.

Step-by-step

    • Combine cilantro, garlic, peppers, thyme, oil and salt and pepper in a medium sized bowl.
    • Spread mixture over raw chicken pieces and place in a large plastic bag.
    • Allow to marinate in the refrigerator for twenty four hours.
    • In a large dutch oven, heat oil and molasses.
    • Brown chicken pieces in the molasses mixture. This may take two batches of browning for four pounds of chicken.
    • Place browned chicken on a plate.
    • Once chicken is browned, preheat oven to 375°.
    • Cook onion in the leftover molasses/oil mixture that remains in the bottom of your dutch oven. Use a wooden spoon to scrape up the stuck on cooked molasses as there is a lot of flavor in those bits.
    • Cook onion until translucent.
    • Add coconut milk, tomato paste, water, powdered ginger, nutmeg and cinnamon.
    • Allow this to cook for three to four minutes.
    • Add salt and pepper. Be sure to take a taste to see if it needs more salt.
    • Place chicken pieces back in dutch oven on top of sauce.
    • Cover with veggies.
    • Add some more salt and a generous amount of fresh ground black pepper to the veggies.
    • Cover and cook in oven for 90 minutes.
    • Serve over white rice and garnish with cilantro or parsley and some diced red pepper.
