    • BLINIES: Mix all dry ingredients in a bowl and gradually add the milk while stirring until the batter is smooth and lump-free.
    • Heat a pan to medium/high heat and add some coconut oil.
    • Place 3-4 blinies on the pan at a time using 2 tbsp. batter.
    • Fry them for 3-4 minutes, until there are holes in the batter on the top side, before turning and frying for another 1 minute.
    • Preheat oven to 200 degrees and line a baking sheet with baking paper.
    • Peel the beets, cut them into large cubes and spread them on the baking sheet.
    • Toss the beets with olive oil and salt and bake until tender for about 45 min.
    • Place the baked and cooled beets in a food processor with creme fraiche, dill and lemon juice and blend until smooth and creamy.
    • Season with salt and pepper.
    • In a medium hot pan, sauté mushrooms and garlic in oil until the mushrooms are tender and the moisture has evaporated.
    • Place a large tablespoon of beetroot puree on a blinie, top with a large tablespoon of fried mushrooms and garnish with fresh dill.
