Slow Cooked Summer Beef Casserole: A Weeknight Winner

As a busy working mom, finding time to cook delicious and wholesome meals can feel like a constant uphill battle. Between school runs, work deadlines, and the never-ending cycle of laundry, the idea of spending hours in the kitchen often feels like a luxury I can't afford. That's why I've become a huge fan of slow-cooked meals – they're my secret weapon for getting a hearty, flavorful dinner on the table without sacrificing my sanity or precious family time. This Slow Cooked Summer Beef Casserole is a perfect example.

This recipe is incredibly versatile; I often adapt it depending on what vegetables I have on hand. Sometimes I’ll add carrots and potatoes for a more substantial meal, or maybe some mushrooms for an earthy depth of flavor. The beauty of slow cooking is that it allows the flavors to meld beautifully, creating a rich and satisfying casserole that's perfect for a cozy weeknight dinner or a relaxed weekend gathering. The tender beef, the sweetness of the peppers, and the slightly crunchy courgette all combine to create a symphony of tastes and textures that my family just can't get enough of.

The preparation is straightforward, too. The only time-consuming part is browning the beef initially, but even that is manageable. Once it's in the slow cooker (or oven, in this case!), it's pretty much hands-off. I usually start it in the morning before heading to work, and by the time I get home, the delicious aroma is already wafting through the house. The final touch of parmesan, parsley, and red onion adds a beautiful freshness that elevates the dish.

Serving it with couscous is my personal preference, but you could also pair it with mashed potatoes, rice, or even crusty bread for soaking up the delicious juices. I often experiment with different flavors of couscous to keep things interesting. The possibilities are endless! This isn't just a simple recipe; it's a lifesaver for busy people who still want to enjoy a wholesome and flavorful meal without spending hours in the kitchen.

Beyond the practical advantages, this recipe also brings a sense of comfort and family togetherness. The slow cooking process imbues the dish with a sense of warmth and nostalgia, reminiscent of simpler times. The aroma itself creates a comforting atmosphere, inviting everyone to the table. It's more than just dinner; it’s an opportunity to connect, relax, and enjoy the fruits of a relatively effortless culinary endeavor.

So, if you’re looking for a reliable, delicious, and stress-free dinner recipe, give this Slow Cooked Summer Beef Casserole a try. I guarantee it will become a staple in your own kitchen, just as it has in mine. Feel free to experiment with your own additions and variations; that's part of the fun! And, most importantly, enjoy the deliciousness – and the extra time you'll have for yourself or your family!

Step-by-step

    • Preheat the oven to 160c/325f.
    • Heat the oil on a medium-high heat in a dutch oven or other heavy based pan.
    • Place the beef in a bowl or bag and add the flour, salt and pepper. Toss together to coat, then add the beef to the pan.
    • Brown the meat all over (should take about 6-8 minutes).
    • Add the garlic, stir and cook for one minute, then add the Guinness and stock.
    • Bring to the boil, stir and place a lid on the pan.
    • Place in the oven and cook for 3 hours (check every hour and top up with a splash of water if needed).
    • After 3 hours add in the chopped peppers and courgette.
    • Place the lid on and place back in the oven for 5 minutes. This should ensure the veg stays crunchy but is warmed through.
    • Take out of the oven and, sprinkle on the parmesan, parsley and red onion slices, then serve with warm couscous.
