Step-by-step

    • Add ingredients in the sequence mentioned above into the Baking Mould of the Bread Machine.
    • Plug in the Bread Machine: Programme: 4 (DULCE), Weight: 1250g, Browning: MEDIUM. Press Start/Stop button (B).
    • When the signal tone sounds (after 55 min) the machine will be kneading the dough for the second time: open the lid to add the raisins while the machine continues kneading.
    • When the kneading is finished (after 10 more min) stop the machine, put on a latex glove to remove the kneading pads. Then form the bread in a nice hump, pressing raisins down in the dough and paint the bread with whisked egg white.
    • Let the bread rise for another 65 min, then bake for 60 min, and rest warmly for another 60 min, i.e. 3 hours and 5 minutes, before placing bread on the grill where it needs to cool.
