My Secret Weapon for Quick Lunches: Pizza Buns!

As a busy working mom, time is my most precious commodity. Juggling work deadlines, school pick-ups, and keeping a household running smoothly leaves little room for elaborate meal preparation. That's why I've developed a go-to recipe that's both delicious and incredibly convenient: Pizza Buns!

These aren't your average dinner rolls. Oh no, these are little pockets of pizza heaven, perfect for a quick lunch, a satisfying after-school snack, or even a fun addition to a casual dinner party. The beauty of these pizza buns lies in their versatility and ease of preparation. I often make a large batch, freeze them individually, and then pull them out whenever a quick meal is needed. Thirty seconds in the microwave and I have a warm, cheesy, and satisfying lunch ready to go. It's my secret weapon for those hectic days when I don't have time to cook a full meal, but still want something flavorful and satisfying.

The recipe itself is surprisingly simple. The dough comes together quickly, requiring minimal effort. Even better, you can get creative with the toppings. Stick to classic pepperoni and mozzarella, or experiment with your favorite pizza combinations. I've been known to throw in some spinach and mushrooms for a healthier twist, or even add some leftover cooked sausage for an extra protein boost. The possibilities are endless!

The best part? These pizza buns are incredibly freezer-friendly. I usually bake a big batch on the weekend, then individually wrap them in plastic wrap and store them in a freezer bag. This way, I always have a delicious and convenient lunch option ready whenever I need it. No more frantic searches for something quick and easy; with these pizza buns, lunch is always a few minutes away.

Beyond the convenience, these pizza buns are a family favorite. My kids love them, and they're a great way to get them to eat their veggies if I sneak in some finely chopped peppers or onions into the sauce. It's a fun way to get a healthy meal that doesn't feel like a chore for the children. Plus, they’re far healthier than grabbing fast food. The fact that I can control the ingredients means I know exactly what’s going into their bodies, making me feel better as a mother. I can also adjust the amount of cheese to fit the family's preferences. This control over ingredients is a huge plus.

The ease of preparation and the sheer deliciousness of these pizza buns have made them a staple in our household. I highly recommend giving them a try. They are truly a lifesaver on busy days. They’re the perfect solution to the daily lunch dilemma, providing a quick, delicious, and satisfying meal without sacrificing flavor or quality.

But these aren't just for busy weekdays. These little pizza rolls can also be a wonderful addition to a casual get-together. I’ve served them at parties, potlucks, and even as a fun appetizer at game nights. They’re always a hit. And because you can make them ahead of time and freeze them, they're practically stress-free to prepare for any occasion.

So, if you're looking for a delicious, convenient, and versatile recipe to add to your repertoire, give my Pizza Buns a try. You won't regret it! I promise you’ll find yourself reaching for these little pockets of pizza heaven more often than you’d expect.

Ingredients

1/2 teaspoon salt

1 1/2 cups water

1 tablespoon sugar

1 tablespoon yeast

3-4 1/2 cups flour

1 jar pizza sauce

1 bag mozzarella shredded

1 bag pepperoni sliced

Step-by-step

    • Combine water, sugar, and yeast. Let rise for 10 minutes.
    • In mixer with a dough hook, add salt and 3/4 of the flour. Keep adding the remaining flour, until the dough pulls away from the bowl.
    • Place dough in lightly greased bowl, cover, and let rise for 45 minutes.
    • Punch down dough and roll into rectangle onto floured or greased counter.
    • Top with sauce, cheese, & pepperoni. Leave a 1/2 inch at end edge so the rolls will seal.
    • Roll from the long edge, until dough forms a log. Cut into 12 slices using floss.
    • Add to parchment lined baking pan and cover and let rise for another 30 minutes.
    • Bake 350F for 25-30 minutes.
