Step-by-step

    • Heat Olive oil in pan and braise meat until half done and add in the sherry.
    • Cook until preferred doneness but keep in mind it will be put in the oven to bake a little longer so do not over cook in the pan.
    • Add salt and pepper as desired, and feel free to add other spices you like.
    • Brush the tops of the mushroom caps with Olive oil and place gill side up on a sprayed baking sheet. (I usually cover the sheet with foil first for less of a mess to clean.)
    • Once meat is done on the pan place 1/4 onto each mushroom then pour the drippings from the pan over each; this will help to cook the mushroom from the inside.
    • Place three or four rings of onion on each on top of the meat.
    • Cover each with a slice of provolone cheese.
    • Preheat oven to 350 degrees, once heated bake for 10 minutes.
    • After 10 minutes turn on broiler and watch until cheese starts to brown; try not to burn.
