  • 1/2 cup chicken bones and all, not a stewing chicken rotisserie chicken works well
  • 31/2 liters water can use stock
  • 2 small leeks white part only sliced thin
  • 2 stalks celery sliced thin, leaves also
  • 2 stalks parsley chopped, some for garnish
  • 1 large carrot sliced thin or chopped
  • 11/2 tsp salt

  • rice or noodles cook separate , 2 tbsp per serving , add when ready to serve

Step-by-step

    • Cut up chicken into pieces, remove skin
    • Place in cold water, bring to a boil
    • Reduce heat simmer 15 minutes
    • Remove chicken to a cutting board
    • Add all other ingredients
    • Debone chicken using 2 forks
    • Use approximately 2 tbsp chicken per serving
    • Place chicken in pot
    • Add 1 sprig Thyme half way through, delicious
    • Cook noodles or rice separate and add when serving
    • Vermicelli, or mini star noodles, black, brown, or white rice all work well
