MPC No-Knead Bread
This is your one and only go-to bread recipe. A must for any prepper kitchen. Use it in the oven (sun oven too), bread machine, and in a Dutch oven over a campfire. I use my Dutch oven in a conventional oven and it turns out great. You dont have to cook over a campfire to use your cast iron pans. The recipe is great to use now or when SHTF. Its very easy to make even if youve never made bread before. It tastes great too.

This no-knead bread recipe has become my go-to, a staple in our household. It’s so versatile; I've baked it in a regular oven, a Dutch oven on the stovetop (a fantastic way to add a rustic charm), and even experimented with a sun oven once on a camping trip – the results were surprisingly fantastic each time! The best part? It's incredibly forgiving. Even on days when my schedule feels overwhelming, this recipe consistently delivers a perfect loaf.

The simplicity of this recipe is what truly sets it apart. Forget the elaborate techniques and specialized equipment; all you need are a few basic ingredients, a bowl, and a little bit of patience. The rising time is naturally longer but that’s okay. It allows me to focus on other things - working from home, driving kids to school, managing house chores - and still have a warm, homemade loaf ready when the family gathers for dinner. The aroma alone is enough to make everyone excited. This isn't just a recipe; it’s a time-saver, a stress-reliever, and a guaranteed way to bring a comforting warmth to any meal.

The taste is wonderfully satisfying - crusty on the outside, soft and airy on the inside. It doesn’t matter what occasion or time of year, this bread always brings a touch of joy to our home.

I’ve adapted this recipe to fit my lifestyle and my kitchen. I initially found the recipe online and started with that, but over time, I tweaked it based on my preferences and what I had on hand. It’s a testament to its versatility, as it truly is a recipe that can be adapted and adjusted easily.

Beyond the convenience and deliciousness, this bread has a certain heartiness that makes it ideal for unexpected situations. Having a reliable bread recipe, something that can be made even without a fully-stocked pantry or sophisticated equipment, gives me a sense of reassurance. This is not just a delicious meal; it's a symbol of self-reliance.

Ingredients:

  • 1/2 cup water
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 cup MPC bread starter

Instructions (Please refer to the detailed instructions provided separately):

Step-by-step

    • Mix starter, water and sugar together.
    • Add flour and salt.
    • Mix until dough forms a ball. You'll have to use your hands to finish up forming the ball.
    • Place in a greased and floured bread pan 9 x 5 1/2 x 3 inches or a 10" Dutch oven (no need to grease or flour).
    • Cover bread pan with a dishcloth or your Dutch oven with the lid.
    • Place in a warm location.
    • Allow to rise until doubled in size. This will take several hours depending on humidity and room temperature.
    • Bake at 375 degrees for 35 minutes, uncover the last 5 minutes to brown crust.
    • Add starter, water and sugar to bread machine.
    • Add flour and salt.
    • Turn on to white bread setting.
    • Use rubber spatula to scrape sides of pan as it mixes to help dough form a ball.
    • Dough should easily pull from sides of pan. If it looks too dry add a tablespoon of water at a time to pan. If it's too moist add a pinch of flour at a time until dough easily pulls from sides.
