My Comfort Food: Chicken Noodle Soup

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and of course, delicious. That’s where this Chicken Noodle Soup recipe comes in. It’s a lifesaver on those hectic weeknights when the last thing I want to do is spend hours in the kitchen. The beauty of this recipe is its adaptability. I often adjust it based on what's in my fridge – sometimes adding extra vegetables, other times using different pasta. The core recipe remains simple and satisfying, a perfect balance of comforting flavors and minimal effort.

The aroma alone is enough to transport me back to my childhood, snuggled up on the sofa with a steaming bowl of my grandmother's soup. This recipe isn't just about nourishment; it’s about creating memories and traditions. It’s the kind of meal that makes everyone feel at home, loved, and cared for. The simple act of creating something warm and delicious for my family brings me an immense sense of joy and fulfillment. It's a testament to the power of food to connect us and remind us of simpler times.

Beyond the convenience, this soup is packed with nutrients. The chicken provides a great source of protein, essential for keeping me energized throughout the day. The vegetables add vitamins and fiber, contributing to a well-rounded, healthy meal. And the simple broth is incredibly soothing, particularly on those days when I'm feeling under the weather. I’ve even experimented with different types of pasta, incorporating healthier options like spaghetti squash or zucchini noodles for a lighter twist. It's amazing how a simple tweak can make all the difference!

Making it My Own: I’ve found that small adjustments can make this soup truly unique. Sometimes I add a splash of white wine for extra depth of flavor, while other times I’ll use different herbs to change the profile – a little thyme, rosemary, or even a dash of oregano can make a big difference. The great thing is, there’s no one right way to make this. Experiment with your favorite vegetables and spices; the possibilities are endless.

Beyond the Bowl: This versatile soup is not limited to dinner. It’s perfect for a quick lunch, a cozy weekend brunch, or even a hearty packed lunch for work. The leftovers are just as delicious the next day, if not better! I often double the recipe and freeze portions for those especially busy weeks when I need a quick, healthy meal ready to go.

This Chicken Noodle Soup is more than just a recipe; it's a ritual, a comfort, and a celebration of simple pleasures. It’s a testament to the fact that even in the midst of a busy life, there’s always time to create something delicious, nourishing, and full of love. Try it for yourself; I’m sure it’ll become a staple in your kitchen too.

Tips and Tricks:

  • Use leftover roast chicken for an even quicker meal prep.
  • Don't be afraid to experiment with different vegetables – mushrooms, celery, or green beans would all be delicious additions.
  • For a richer broth, use bone-in chicken pieces instead of a carcass.
  • Add a squeeze of lemon juice at the end for a touch of brightness.
  • Garnish with fresh herbs like dill or chives for extra flavor and visual appeal.

Making this soup is a therapeutic process for me, a moment of calm amidst the chaos of daily life. The rhythmic chopping of vegetables, the simmering broth, the satisfying clinking of the spoon against the bowl – these small actions ground me and help me focus on the present moment. It's a simple pleasure, a reminder that even amidst the whirlwind of responsibilities, there’s time to savor life's little joys. So next time you're feeling overwhelmed, take a moment to create something delicious. The result will be much more than just a meal; it'll be a little piece of happiness.

    • Clean pot and drizzle with some more olive oil, add the onion, carrots and parsnips and fry till softened and lightly golden.
    • Add in the homemade stock and bring to a boil, reduce heat to low, cover and simmer for about 1 hour, until veg is tender.
    • For the last 20 min of cooking time, add in the cooked chicken and spaghetti.
    • Season as needed and garnish with chopped Italian parsley.
    • Divide among bowls and enjoy!!
