Mom's Famous Potato Salad Recipe

Mom's Famous Potato Salad: A Family Recipe

This isn't just a potato salad recipe; it's a tradition, a family heirloom passed down through generations. As a busy mom of three, I understand the value of a recipe that’s both delicious and manageable, especially when entertaining a crowd. This Amish-style potato salad is a staple at our family gatherings, always disappearing faster than I can make it. The secret, I believe, lies in the simplicity of the ingredients and the careful attention to detail in the cooking process. Each step, while seemingly straightforward, contributes to the overall creamy, tangy, and subtly sweet perfection of the dish.

The foundation of this potato salad is, of course, the potatoes. We use a generous five pounds, enough to feed a whole family – or a hungry group of friends! The key is to boil them until they're tender but still hold their shape; you don't want mushy potatoes here. While the potatoes are cooking, I usually multitask—peeling and chopping the hard-boiled eggs and the sweet onion. Timing is everything. The rhythm of the preparation, the anticipation of that creamy, tangy taste, is half the enjoyment. I often involve my children in the process—a great way to teach them basic cooking skills and bond over a shared task. There's a certain satisfaction in working together to create something delicious and appreciated by everyone.

Beyond the potatoes, the dressing is crucial. We opt for a classic combination of Miracle Whip, yellow mustard, sugar, salt, and pepper. The Miracle Whip adds a delightful creaminess, the mustard provides a tangy kick, and the sugar balances everything out with a subtle sweetness. The proportions are important, carefully balanced to create a harmonious flavor profile that isn't too sweet, not too tangy, but just right. You'll need a large bowl for mixing – the biggest you've got – to ensure everything combines thoroughly and evenly. Once everything is mixed, I usually let the salad sit for a short time before serving to allow the flavors to meld together fully. This brief resting period significantly enhances the overall taste. Serving it cold is ideal, a refreshing contrast to a hot summer day or a comforting side dish for any meal.

This potato salad is more than just a side dish; it's a symbol of our family. It represents those cherished moments spent together, the laughter, the stories shared around the table. It's the dish that brings back memories of childhood summers, of large family gatherings, and of the simple joys of shared meals. Every time I make this potato salad, I’m reminded of our family history and the legacy of traditions we carry forward. It's a recipe that evokes feelings of comfort, warmth, and love—and that, to me, is its most valuable ingredient.

Making this potato salad has always been a fun family project, a way to connect with loved ones while creating something special. It's a testament to simple ingredients combined with care and attention, resulting in something truly extraordinary. So gather your family, gather your ingredients, and get ready to create a delicious memory with Mom's Famous Potato Salad.

Ingredients:

  • 5 pounds potatoes
  • 1 dozen eggs
  • 1 large sweet onion, chopped (about 2 cups)
  • 2 cups Miracle Whip
  • 5 tablespoons yellow mustard
  • 3 tablespoons granulated sugar
  • 2 tablespoons kosher salt
  • 1/4 teaspoon black pepper

Step-by-step

    • Let's start with the Eggs. Place eggs in a heavy-bottomed pot and cover them with cold water. Make sure the tops of the eggs are covered by at least an inch of water. How much water will depend on the size of the pot, but in general, a bigger pot is better. Crowding the eggs risks cracking them. Cook on High Heat.
    • While the Eggs are cooking, peel the potatoes (Time Management :-) ) by the time you finish peeling all those potatoes, your eggs should be done (About 20 Mins). If it takes you longer than that to peel 5 lbs of potatoes... find a helper ;-)
    • Remove the Eggs from the heat and drain off as much of the water as you can, then recover with Cold Water and let cool.
    • All of your potatoes should be peeled by now. Cut them into quarters (the smaller ones can just be cut in half) Place the potatoes in a heavy-bottomed pot (I like to rinse them at least once to wash off some of the starch) and cover them with hot water. Add the 2 Table Spoons of Kosher Salt to the water. Cook on High Heat for about 15 Min until the potatoes are tender but still firm. (Remember, you're not making mashed potatoes, so don't overcook them). While your potatoes are cooking you can use this time to peel your hard-boiled eggs and chop up your onion.
    • Drain the Potatoes, you want to get them out of the water as soon as possible because they will continue to cook even after you have removed them, so again, make sure you don't overcook.
    • Allow the potatoes to cool. Again, use this time to Dice up your Hard Boiled Eggs and to clean up your mess you have made so far.
    • Once the potatoes have cooled, Dice into bite-size pieces and place into a Large bowl (Biggest one ya got) add the Eggs, Onion, Miracle Whip, Mustard, Sugar, Salt & Pepper and mix well.
    • Enjoy!!
