A Weeknight Wonder: Cajun Chicken Pasta with a Sun-Dried Tomato Twist

As a busy working mom, finding time to cook a delicious and satisfying dinner can feel like a Herculean task. Between school pick-ups, after-school activities, and the never-ending to-do list, whipping up a gourmet meal often takes a backseat. But this Cajun Chicken Pasta with Sun-Dried Tomato Alfredo Sauce is my secret weapon against weeknight dinner struggles. It’s quick, flavorful, and surprisingly elegant—perfect for impressing family and friends without spending hours in the kitchen.

The beauty of this recipe lies in its simplicity. The vibrant sun-dried tomatoes add a burst of sweet, savory flavor that complements the spicy Cajun chicken perfectly. The creamy Alfredo sauce, made with a touch of cream cheese and Parmesan, provides a luxuriously rich base that coats the pasta beautifully. And the best part? It all comes together in under 30 minutes! I often prep some of the ingredients earlier in the day – chopping the vegetables or even marinating the chicken – to make the cooking process even faster.

The Cajun seasoning provides a nice kick, but it’s easily adjustable to your spice preference. For those who prefer a milder flavor, simply reduce the amount of seasoning. Conversely, for those who enjoy a fiery kick, feel free to add a pinch of cayenne pepper. I usually add a sprinkle of cayenne at the very end, giving it a nice heat without making the whole dish too spicy for the kids. I love how versatile this dish is; it's easily adaptable to whatever vegetables I have on hand. Sometimes I’ll add spinach or mushrooms to make it even more nutritious.

This dish isn't just a weeknight savior; it's also a fantastic crowd-pleaser. I've served it at numerous gatherings, and it always disappears quickly. Guests are always amazed by how simple it is to prepare, yet how incredibly flavorful and satisfying it is. The vibrant colors of the peppers and tomatoes are also a visual feast, making it an attractive addition to any dinner table.

The creamy Alfredo sauce is the true star of the show. The combination of sun-dried tomatoes, Parmesan cheese, and cream cheese creates a rich and decadent sauce that perfectly complements the Cajun spiced chicken. The sauce clings to the fettuccine, ensuring every bite is packed with flavor. It’s also a great way to use up any leftover sun-dried tomatoes you may have in your pantry. I often buy them in bulk and store them in oil, making it a staple ingredient in my cooking.

One of my favorite things about this recipe is its adaptability. You can easily swap out the chicken for shrimp or even tofu for a vegetarian option. The flavor profile remains delicious, regardless of the protein you choose. You can also adjust the vegetables based on your preferences. I've tried adding zucchini, broccoli, and even asparagus, all with fantastic results.

Beyond the ease of preparation and delicious taste, this Cajun Chicken Pasta is also a healthy and balanced meal. The chicken provides lean protein, while the vegetables offer essential vitamins and minerals. The pasta provides carbohydrates for energy, and the whole dish is relatively low in fat compared to many other pasta dishes. This makes it a perfect choice for those watching their calorie intake or aiming for a balanced diet.

This recipe has become a staple in my household, and I’m confident it will become a favorite in yours as well. It's a testament to the fact that healthy, delicious, and impressive meals don't have to take hours to prepare. Sometimes, the simplest recipes are the most satisfying. So, the next time you’re looking for a quick, easy, and incredibly flavorful dinner option, give this Cajun Chicken Pasta a try. I promise you won’t be disappointed!

Step-by-step

    • Cook fettuccine in salted water according to package directions just until al dente. Reserve 1/3 cup pasta water then strain and set aside.
    • In a small bowl, mix 2 teaspoons Cajun seasoning with 1 tablespoon olive oil and rub evenly all over chicken breasts. Let chicken sit while you slice your vegetables.
    • Heat one tablespoon olive oil in a large non-stick skillet over medium high heat. Once very hot, add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned (or blackened if you prefer) on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 5-7 more minutes (depending on thickness of chicken), or until chicken is cooked through. Remove to a cutting board and let rest at least 5 minutes before slicing.
    • Add enough olive oil to remaining oil in pan to equal 1 tablespoon olive oil. Heat over medium high heat. Add peppers, onions and ½ teaspoon Cajun seasoning and saute for one minute. Remove to a plate.
    • Wipe out skillet and heat 2 tablespoons sundried tomato oil over medium heat. Add sundried tomatoes and garlic and saute for one minute. Sprinkle in flour and continue to cook for 2 minutes, stirring constantly.
    • Turn heat to low and stir in chicken broth. Whisk cornstarch with milk and add to pan along with tomato paste, ½ teaspoon Cajun seasoning, salt and pepper. Bring sauce to a simmer and continue to cook and stir until sauce is thickened (but not overly thick), approximately 5 minutes.
    • Reduce heat to low and stir in cream cheese until melted, followed by Parmesan cheese until melted and finally whisk in mozzarella until melted.
    • Add pasta, peppers and toss evenly to coat, adding desired amount of reserved pasta water a little at a time to reach desired consistency. Top pasta with chicken or toss chicken with pasta.
    • Garnish individual servings with plenty of freshly squeezed lime juice, salt and pepper. Garnish with fresh parsley if desired. If you like it spicier, sprinkle a little cayenne dusting over top.
