Certain brands of bacon contain more salt so coating both sides of the bacon would over salt the candied bacon. I prefer using cheap or thin bacon because you don’t have to coat both sides and the Snowflakes sinks in better resulting in a caramelized bite. Since Snowflakes contains honey keep an eye on your bacon every 15 minutes while cooking (honey will burn quicker). Possibly the easiest recipe I’ve ever written.
