  • 1 can (8 oz.) no salt added tomato sauce
  • 1 can (8 oz.) mushroom slices (optional)
  • 1 container (15 oz.) ricotta cheese part skim
  • 1/2 cup parmesan grated cheese divided
  • 1 teaspoon dried basil divided
  • 1 box (8 oz.) no-boil lasagna noodles

I often make a double batch of this lasagna, carefully portioning it into freezer-safe containers. It's a wonderful way to have a ready-made meal available on those hectic weeknights when time is precious. Simply pop a container into the oven, and a warm, delicious meal is ready in minutes. Step-by-step

    • In a 5 qt. saucepan, brown the ground beef and drain it well.
    • Placing the beef back on the stove over medium-low heat, add the spaghetti sauce, garlic, salt, pepper, mushrooms, 1/2 teaspoon oregano and 1/2 teaspoon basil.
    • Cover and simmer for about 20 minutes.
    • Meanwhile, in a small mixing bowl, add the ricotta, 1/2 teaspoon oregano, 1/2 teaspoon basil, egg, and 1/2 cup of grated Parmesan cheese; mix well and set aside.
    • Preheat oven to 350 degrees. Coat a 8"x8" baking pan with cooking spray.
    • Remove the sauce from the heat.
    • Ladle about 1 cup of the sauce into the pan and spread it to coat the bottom.
    • Place a layer of pasta noodles crosswise over the sauce, making sure they do not touch.
    • Spread about half of the ricotta mixture over the pasta.
    • Spread a layer of sauce over the ricotta.
    • Sprinkle 1/2 of one bag of the Italian cheese blend over the sauce.
    • Place another layer of noodles.
    • Cover with remaining ricotta cheese and remaining Parmesan cheese.
    • Add another layer of sauce and repeat layers until all ingredients are used, topping with remaining bag of Italian blend cheese.
    • Coat one side of a sheet of aluminum foil with cooking spray. Cover the baking pan, cooking spray side down.
    • Bake for 30 minutes.
    • Remove foil and bake for another 10-15 minutes or until the cheese starts to get a golden brown.
    • Remove from oven and let it stand for 5 minutes before cutting.
    • Serve with any remaining sauce, if desired.
