My Favorite Mediterranean Comfort Food: Chicken Orzo Soup

As a busy working mom, finding time to cook delicious and healthy meals can sometimes feel like an impossible task. Between work deadlines, school pick-ups, and the never-ending to-do list, a simple yet satisfying meal is a true lifesaver. That’s where this Mediterranean Chicken Orzo Soup comes in. It's a recipe that’s been a staple in our family for years, passed down (with a few tweaks!) from my husband's Greek grandmother. The best part? It’s incredibly easy to make, even on a weeknight, and it's bursting with flavor. The combination of tender chicken, vibrant vegetables, and perfectly cooked orzo in a light and flavorful broth is simply irresistible. The soup is hearty enough to be a complete meal, yet light enough to not leave you feeling sluggish afterwards.

This recipe isn't just about convenience; it's a celebration of Mediterranean flavors. The fresh herbs – oregano and rosemary – add a fragrant depth that transports you to a sun-drenched Greek island. The bright citrus notes from the lemon juice provide a delightful contrast to the savory chicken and vegetables. And the orzo, a small pasta that holds its shape beautifully, adds a lovely textural element to the soup. I often serve this with a dollop of feta cheese on top, or a sprinkle of Parmesan, for an extra touch of creamy richness. A side of crusty bread is also a perfect accompaniment for sopping up the delicious broth.

What I love most about this soup is its versatility. You can easily adapt it to your own preferences and what you have on hand. Feel free to add other vegetables, like zucchini or spinach, to increase the nutritional value and change the flavor profile slightly. If you don’t have white wine, you can easily omit it, or substitute with extra chicken broth. The beauty of this recipe lies in its simplicity and adaptability; it's a blank canvas for your culinary creativity. It's also a great way to use up leftover cooked chicken, making it an even more efficient meal.

Beyond the deliciousness, this soup has become a symbol of comfort and connection for our family. It’s a dish that evokes memories of warm evenings spent together, sharing stories and laughter around the dinner table. The simple act of preparing this soup, chopping vegetables, and simmering the broth, feels almost meditative. It's a chance to slow down, connect with my family, and appreciate the simple joys of everyday life. It's more than just a meal; it’s a ritual, a tradition, a testament to the power of food to bring people together.

So, the next time you're looking for a quick, healthy, and incredibly flavorful meal, give this Mediterranean Chicken Orzo Soup a try. It's a recipe that's sure to become a family favorite, a testament to the enduring power of simple, wholesome ingredients and the love that goes into preparing a delicious meal. I hope it brings you as much joy as it brings to our family.

Tips and Variations:

  • For a richer flavor, brown the chicken before adding it to the soup.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Use different types of pasta, such as small shells or ditalini.
  • Add chickpeas or other beans for extra protein and fiber.
  • Garnish with fresh herbs, such as dill or mint.
  • Serve with a side of lemon wedges for an extra squeeze of fresh flavor.

Enjoy!

Step-by-step

    • In a large saucepan, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 6-8 minutes or until no longer pink. Remove from pan.
    • In same pan, heat remaining oil over medium-high heat. Add vegetables, salt, oregano and pepper; cook and stir 4-6 minutes or until vegetables are crisp-tender. Add wine, stirring to loosen browned bits from pan. Stir in broth, rosemary and bay leaf; bring to a boil.
    • Add orzo. Reduce heat; simmer, covered, 15-18 minutes or until orzo is tender, stirring occasionally. Return chicken to pan; heat through. Stir in lemon peel and juice; remove bay leaf.
    • If desired, top each serving with parsley.
