My Favorite Quick and Easy Chatur Paratha Recipe

As a busy working mom, finding time to cook delicious and healthy meals can be a real challenge. That's why I rely on simple, versatile recipes like this Chatur Paratha. It’s a perfect example of how a few humble ingredients can transform into a satisfying and flavorful meal, perfect for a quick weeknight dinner or even a satisfying weekend brunch. The best part? It's incredibly adaptable – perfect for busy weekdays or a leisurely weekend. I often find myself whipping up a batch when I need a comforting, familiar taste that reminds me of home. The aroma alone is enough to fill the house with warmth, promising a delicious and satisfying meal.

The beauty of this Chatur Paratha lies in its simplicity. It's quick to assemble, requiring minimal chopping and preparation. The dough comes together easily, and the filling is a simple blend of spices and roasted gram flour. The whole process is a relaxing and mindful experience for me, a welcome break from the hustle and bustle of daily life. And the result? Golden-brown, flaky parathas bursting with a delightful savory flavor. The subtle sweetness from the sugar balances perfectly with the spicy kick from the chilies. I find that a little squeeze of fresh lemon juice really brightens up the entire dish, adding a touch of freshness that cuts through the richness of the flour. And because it's a homemade recipe, I can control exactly what goes into my food, ensuring it’s both healthy and delicious.

I often experiment with variations. Sometimes I add finely chopped spinach or potatoes to the filling for an extra boost of nutrients and flavor. Other times, I'll substitute whole wheat flour for part of the all-purpose flour to make it even healthier. The possibilities are endless! It's a recipe that easily adapts to your preferences and dietary needs, making it a staple in my kitchen. It is incredibly versatile – I can easily adapt it depending on my available time and ingredients. And the best part is, it’s always a winner with my family! Even my picky eater kids love it.

The best way to serve Chatur Paratha, in my opinion, is hot and fresh. I particularly enjoy it with a side of tangy pickle (achar) and a sprinkle of green chilies for an extra kick. Step-by-step

    • Mix Chatu with ½ Tsp. salt, sugar, chopped chilies, chopped onions, lemon juice, and mustard oil.
    • Prepare a medium-tight dough of both flours with ½ Tsp. salt and 1 Tbsp. refined oil. Let it rest for 15 minutes.
    • Divide the dough into 7-8 round balls.
    • Roll out each ball into a small 2 cm diameter circle and fill it with 2-3 Tsp. of Chatu/Sattu mixture.
    • Heat a tawa/flat pan (a non-stick pan is preferred).
    • Roll one stuffed dough ball into a 5 cm diameter round paratha using a rolling pin. Cook on the tawa, roasting both sides.
    • Apply a little vegetable oil/ghee and shallow fry until golden brown.
    • Repeat with the remaining stuffed dough balls.
    • Spread butter (optional) on the paratha and serve hot with achar/pickle and green chili.
