Bigg Daddy's Beef & Noodles: A Family Recipe Reimagined

This recipe isn't just a dish; it's a journey through time, a warm hug in a bowl, and a testament to the enduring power of family traditions. It started as a simple recipe, passed down from my grandmother to my mother, and eventually to me. But this isn't your grandma's beef and noodles. Oh, it retains the heart, the soul, the comforting hug of the original, but I've added my own touches, my own spin, to elevate this classic to a whole new level of deliciousness. The rich, savory depth of flavor will transport you back to those cozy family dinners, only now, the flavors are even more pronounced, more vibrant, more intensely satisfying.

The key is in the slow cooking. That 2 1/2 hour braising period isn't just about tenderizing the beef; it's about allowing the flavors to meld, to deepen, to create a symphony of taste that will tantalize your tastebuds. The Guinness adds a rich, malty depth that complements the beef beautifully, while the tomato sauce provides a sweet and tangy counterpoint. And don't even get me started on the vegetables. The carrots, celery, and onions, slowly simmered to perfection, add a subtle sweetness and a textural complexity that perfectly balances the richness of the beef. This isn't just a meal; it's an experience. It's a celebration of simple ingredients transformed into something extraordinary, a dish worthy of any family gathering, any special occasion, or even just a quiet night at home. This is comfort food elevated. This is nostalgia redefined.

Ingredients: A blend of simple, readily available ingredients transforms into a culinary masterpiece. The robust flavor of the Guinness beer, the rich sweetness of the tomato sauce, the earthy notes of rosemary and thyme—all combine to create a taste sensation that's both familiar and entirely new. The hearty chuck roast, slowly braised to fork-tender perfection, is the star of the show. The perfectly cooked noodles offer a delightful textural contrast to the tender beef, and the creamy mashed potatoes provide the perfect complement to this culinary symphony. It's a testament to how exceptional cuisine can be born from simple, everyday ingredients, carefully selected and thoughtfully prepared. The result is a truly unforgettable dining experience that will have you reaching for seconds, and then thirds!

Step-by-step

    • Preheat the oven to 375 degrees F.
    • In a large, heavy-bottomed ovenproof skillet or Dutch oven, heat the olive oil over high heat until smoking.
    • Season the chuck roast aggressively with kosher salt and pepper, and dredge in the flour, shaking off the excess.
    • Place roast in the hot oil and sear until deep brown on both sides, 7 minutes 30 secs on each side.
    • Transfer roast to a plate and set aside.
    • Add carrots, onions, celery, and garlic to the skillet/dutch oven and cook covered on med-high heat until browned and softened (stir occasionally), 6 to 7 minutes.
    • Season the vegetables with salt and pepper, and stir in the Guinness beer, tomato sauce, chicken stock, and herb bundles.
    • Scrape the bottom of the skillet with a wooden spoon to dislodge the brown bits, and bring the mixture to a boil.
    • Return the roast to the skillet/Dutch oven, cover, and place it in the oven.
    • Cook for 2 1/2 hours.
    • Uncover the skillet/Dutch oven and continue to cook for an additional 30 minutes.
    • At this point, the roast will be fork-tender. Remove from the oven and use a ladle or a kitchen spoon to skim the fat from the braising liquid. Set aside for now.
    • Remove the roast and shred with 2 forks and set aside. Remove fat and throw out.
    • Prepare noodles according to the package directions. After noodles have been prepared and drained, place noodles back in the pot and add shredded beef.
    • At this point, you can dump everything into the beef and noodle mixture and reheat on warm temperature OR use a strainer and hold over the beef and noodles pot, dump the broth and vegetables into the strainer to strain out ALL the liquid…moving strainer side to side to get all the juices. I picked out only the carrots and stir them in with the beef and noodle mixture and set at low to reheat. Not a huge onion fan.
    • Serve over "Golden" mashed potatoes. Place mashed potatoes down by first smashing the center down to create a depression then fill the depression in with the beef and noodles.
