A Cozy Bowl of Comfort: My Butternut Squash Soup with Chicken and Orzo

As a busy working mom, finding time to cook a healthy and delicious meal can feel like a Herculean task. Between school drop-offs, client meetings, and after-school activities, the last thing I want to do is spend hours in the kitchen. That's why I adore recipes that are both flavorful and efficient – and this Butternut Squash Soup with Chicken and Orzo is a perfect example. It's creamy, comforting, and surprisingly quick to make, even on my busiest days.

The beauty of this soup lies in its simplicity. The butternut squash provides a naturally sweet and creamy base, while the chicken adds a hearty protein boost. The orzo pasta adds a delightful textural element, preventing the soup from being too heavy. And the subtle hint of Italian seasoning and a touch of spice from the red pepper flakes elevates the flavors to a whole new level. I often use rotisserie chicken to save time, but you can certainly cook your own if you prefer.

Why this soup is my go-to weeknight meal:

  • Speed and Efficiency: Using a pressure cooker significantly cuts down the cooking time. The squash cooks beautifully in minutes, freeing up precious time in my already packed schedule.
  • One-Pot Wonder: Minimal cleanup is a huge plus, especially when I'm juggling multiple tasks. Most of the cooking happens in a single pot, reducing the number of dishes I need to wash.
  • Healthy and Nutritious: This soup is packed with vitamins and nutrients from the butternut squash, chicken, and vegetables. It's a wholesome and satisfying meal that helps fuel my busy days.
  • Adaptable Recipe: This recipe is wonderfully adaptable to your preferences. Feel free to add other vegetables like spinach or kale for extra nutrients. You can also adjust the amount of spice according to your taste. The possibilities are endless!
  • Make-Ahead Friendly: This soup tastes even better the next day! I often make a large batch on the weekend and store it in the fridge for quick and easy lunches or dinners throughout the week. It's the perfect grab-and-go meal for those days when I'm short on time.

Beyond the practical benefits, this soup also offers a sense of warmth and comfort. On chilly evenings, a steaming bowl of this creamy goodness is the ultimate hug in a mug. It's the perfect way to end a long day and recharge for the next one. The subtle sweetness of the butternut squash, combined with the savory flavors of the chicken and herbs, creates a harmonious blend that satisfies both my taste buds and my soul. And the best part? My kids love it too! It's a rare occasion when a healthy, homemade meal is met with such enthusiasm.

Serving Suggestions:

  • Serve with a side of crusty bread for dipping into the creamy soup.
  • Garnish with fresh herbs like parsley or chives for an extra touch of freshness.
  • Add a dollop of plain yogurt or sour cream for a tangy twist.
  • Enjoy it as a starter before a larger meal, or make it a satisfying main course.

This Butternut Squash Soup with Chicken and Orzo recipe is more than just a meal; it's a testament to the power of simple, wholesome ingredients and efficient cooking techniques. It's a recipe that allows me to nourish my family while simultaneously keeping pace with the demands of my busy life. And that, my friends, is something truly special.

Step-by-step

    • Melt butter in pressure cooker pot.
    • Sauté onions, celery, and carrots.
    • Add garlic, stir briefly and add chicken stock, tomatoes and squash.
    • Add Italian seasoning, red pepper flakes, pepper and nutmeg.
    • Select high pressure and 10 minutes cook time.
    • When beep sounds turn pressure cooker off, wait 10 minutes and then use a Quick Pressure Release to release pressure.
    • When valve drops carefully remove lid, tilting away from you to allow steam to disperse.
    • Puree until mixture is very smooth. (I used my immersion blender and pureed it in the pressure cooker pot.)
    • Select Simmer and add chicken, orzo, and half and half and heat until chicken is heated.
    • Serve garnished with thinly sliced green tops of onions and a swirl of half and half.
