Super easy, because the additional water added to the sauce cooks the noodles while the lasagna is baking. You can also use full-fat cheeses & meats, but I prefer the lower-fat (sometimes fat free!) products...you can't tell the difference!

Mama's Super Easy Lasagna: A Weeknight Winner

Mama's Super Easy Lasagna: A Weeknight Winner

As a busy working mom, time is my most precious commodity. Dinner needs to be quick, easy, and—let's be honest—delicious enough to satisfy my picky eaters. That's why I've perfected this super-easy lasagna recipe. Forget hours of prep and complicated layering; this version is designed for efficiency without sacrificing flavor. The secret? Adding water to the sauce cooks the noodles right in the oven, saving you a crucial step and a ton of time.

I've always been a bit of a health-conscious cook, so I lean towards using lower-fat cheeses and lean ground meat. But don't let that fool you! This lasagna is anything but bland. The rich tomato sauce, creamy cheese mixture, and savory meat create a flavor explosion that will leave everyone wanting more. Believe me, even the most discerning palate won't be able to tell the difference between this version and a traditional, higher-fat recipe. This makes it a perfect option for busy weeknights when I don't want to spend hours in the kitchen but still want a delicious and satisfying meal that the whole family can enjoy.

This lasagna is incredibly versatile. Feel free to experiment with different cheeses – provolone, ricotta, or even a blend of Italian cheeses would work wonderfully. You can also add other vegetables, such as spinach or mushrooms, to boost the nutritional value. Leftovers are also fantastic; they actually improve in flavor as the ingredients meld together, making this a perfect make-ahead option for those hectic weekends when you want to enjoy a home-cooked meal without the fuss. And while the recipe calls for ground beef, feel free to substitute with ground turkey, chicken, or even lentils for a vegetarian twist.

The beauty of this recipe is its simplicity. It's a one-pan wonder, which means less cleanup! After a long day at work, the last thing I want is a mountain of dishes to tackle. This recipe allows me to spend quality time with my family instead of being stuck in the kitchen. The entire process, from start to finish, takes less than an hour, making it the perfect solution for those busy weeknights when you need a hearty and satisfying meal without the hassle. Give it a try and see for yourself how easy and delicious this lasagna truly is! It's a guaranteed crowd-pleaser, and the best part? It's so easy, even the kids could help (with supervision, of course!).

Beyond the Weeknight: This recipe isn't limited to just weeknights. It's perfect for potlucks, parties, or even a casual weekend dinner with friends. Its versatility and ease of preparation make it a go-to dish for any occasion. The flavors are robust and satisfying, making it a winner every single time. And who doesn't love a warm, comforting lasagna on a chilly evening? Just imagine that rich, cheesy goodness melting in your mouth… It’s pure comfort food perfection.

Tips and Tricks for Lasagna Perfection: For even easier cleanup, line your baking dish with aluminum foil, extending the foil up the sides. This makes it super easy to lift the lasagna out of the dish once it's cooled. Another tip: If you prefer a crispier top layer, broil the lasagna for the last few minutes of baking. Just watch closely to avoid burning. And remember to always let the lasagna rest for at least 10 minutes before serving to allow it to set up and prevent a messy, saucy disaster. Enjoy!

Serving Suggestions: Serve this lasagna with a simple side salad for a light and refreshing contrast to the rich flavors of the lasagna. A crusty Italian bread is also a perfect accompaniment for soaking up that delicious sauce. For a complete meal, consider serving it with a side of garlic bread or a fresh green salad.

So, ditch the complicated recipes and embrace the simplicity of Mama's Super Easy Lasagna. It's a guaranteed crowd-pleaser, and it'll free up your time for the things that truly matter – like spending quality time with your loved ones.

Step-by-step

    • Preheat oven to 350.
    • Spray 13x9 Pyrex dish with nonstick cooking spray.
    • Brown meat, drain grease, and set aside.
    • Warm entire can of spaghetti sauce and one cup of water on the stove in a saucepan.
    • While sauce warms, stir 2 1/2 cups of mozzarella cheese, entire container of cottage/ricotta cheese, parmesan cheese, and parsley together in a large bowl.
    • After sauce has warmed, pour enough sauce in the bottom of the cooking dish to thinly coat (about 1/3 cup).
    • Place three lasagna noodles on top of thin layer of sauce, then spoon half of the cheese mixture on top of each noodle.
    • Sprinkle 1/3 of the browned meat on top of the cheese, then pour about 1/2 - 2/3 of a cup of sauce on top of the layers.
    • Add three more lasagna noodles and repeat steps above for a second layer.
    • Place the last three noodles on top of the layers and slightly press down to "adhere" the layers together.
    • Pour remaining sauce on top of the lasagna, sprinkle with the rest of the meat, then sprinkle with additional parmesan cheese.
    • Cover with foil and bake for 45-50 minutes.
    • Remove from oven, carefully take off the foil, and sprinkle the remaining 1 1/2 cups of mozzarella cheese on top.
    • Return to oven and bake uncovered until cheese has melted.
    • Allow to cool for approximately 10 minutes before eating because (1) it's too damn hot and (2) it allows the layers to set up a bit so the lasagna isn't running everywhere.
