A Simple Spinach Salad that's Anything But Simple

This spinach salad isn’t your average side dish; it’s a culinary adventure packed into a bowl. The combination of crispy bacon, crunchy walnuts, creamy goat cheese, and tender chicken breast creates a symphony of textures and flavors that will tantalize your taste buds. And let's not forget the warm Italian dressing – it's the secret ingredient that ties everything together, elevating this salad from ordinary to extraordinary.

I developed this recipe out of a desire for a quick, satisfying meal that wasn't just healthy, but also incredibly flavorful. I’m a busy woman, juggling work, family, and a social life, and I need recipes that are both efficient and impressive. This salad fits the bill perfectly. It's surprisingly easy to make, taking only about 20-30 minutes from start to finish, yet the results are restaurant-worthy.

The beauty of this salad lies in its versatility. Feel free to adapt it to your liking. Love extra bacon? Go for it! Prefer a different type of cheese? Experiment! The recipe is a fantastic starting point, a foundation upon which you can build your own culinary masterpiece.

The Star of the Show: The Warm Italian Dressing

The warm Italian dressing is what truly sets this salad apart. The warm bacon fat infused with the rich Italian dressing creates a deeply savory and slightly sweet base that perfectly complements the other ingredients. It's a flavor explosion in every bite.

The Optional Fried Goat Cheese: A Game Changer

The optional fried goat cheese is a game-changer. I know, it sounds a bit fancy, but trust me, it's easier than you think. The crispy exterior and the creamy, tangy interior provide a delightful contrast to the other elements in the salad. However, if you're short on time or simply don't feel like frying the cheese, feel free to skip this step. Crumbled goat cheese on top works perfectly well too!

A Salad for Every Occasion

This spinach salad is remarkably adaptable. It's perfect for a light lunch, a vibrant dinner party side dish, or even a satisfying weeknight meal. It’s a crowd-pleaser that's guaranteed to impress, no matter the occasion. The flavors are bold, yet balanced, and the textures are incredibly diverse. It's a recipe that you’ll find yourself making time and time again.

Ingredients that Make This Salad Sing

The key to this salad's success lies in the quality of its ingredients. Using good quality bacon, fresh spinach, and a flavorful Italian dressing makes all the difference. I highly recommend using a good quality goat cheese as well, it will really elevate the overall flavor profile.

Enjoy the culinary journey!

Step-by-step

    • In a skillet, fry your bacon until nice and crispy. Just before it is done frying add your walnuts and cook in the bacon grease. Remove the bacon and the walnuts to a dish.
    • Place the entire package of chicken breast strips into the already hot skillet with the pan drippings. Quickly warm the chicken strips. These white meat chicken strips are already fully cooked, so you will only need to heat them through. Remove to a dish.
    • In a large bowl add the spinach and add the warmed through chicken strips.
    • In a separate mixing bowl combine the bacon, walnuts, the pan drippings, and the Italian dressing. Mix well.
    • Pour the dressing over the spinach. Give it all a good toss to evenly distribute the dressing. Place your (optional) goat cheese, croutons and tomatoes on top.
    • OPTIONAL: Slice the goat cheese in ½ - ¾ inch slices. (TIP: To make the cheese easier to slice, put it in the freezer for about 10 minutes before cutting. Also, run your knife under hot water in between slices.) Put bread crumbs in a small bowl and add some salt. Beat an egg in a small bowl. Dip the sliced goat cheese in the beaten egg. Flip it gently to coat with egg on both sides. Dip the egg covered cheese into the bread crumbs and coat both sides and fry on medium heat with the coconut oil in a hot pan until golden brown on each side. Remove from heat.
