Step-by-step

    • In a large dutch oven on medium heat cook the sausage for about 5 minutes.
    • Remove and set aside. Do not drain the fat that was released when cooking the sausage.
    • In the same pot add the chicken and brown. Season with a pinch of salt and pepper.
    • When browned remove and set aside.
    • In the same pot, on medium heat, add the oil and flour and whisk together constantly for 15-20 minutes until the desired color that you want for your roux. I stopped at 17 minutes for a medium "chocolate" color.
    • Add the onions, celery, green pepper and garlic to the roux and cook for 10 minutes until the vegetables become soft.
    • Add the hot sauce, Worcestershire, salt, pepper, thyme, creole seasoning, bay leaves and chicken broth to the roux and stir to combine well.
    • Add the sausage, chicken and green onions, cover and simmer for 1 hour until it becomes thick, stirring occasionally.
    • When ready to serve add the Gumbo File Powder to thicken it up a little more.
    • Serve with prepared rice and more green onion slices.
