My Favorite Weeknight Snack: Chipotle Lime Chips and Guacamole

As a busy working mom, finding time to cook can sometimes feel like a Herculean task. Between school runs, work deadlines, and the never-ending to-do list, whipping up elaborate meals often takes a backseat. But that doesn't mean I'm willing to compromise on delicious, healthy food! That's where simple, satisfying recipes like these Chipotle Lime Chips and Guacamole come in. This recipe is a lifesaver, a quick and easy way to satisfy those crunchy cravings while still feeling good about what I'm feeding my family.

The beauty of this dish lies in its simplicity. It requires minimal prep time and utilizes fresh, wholesome ingredients. The vibrant flavors of the lime, the satisfying creaminess of the guacamole, and the satisfying crunch of the homemade chips create a truly irresistible combination. It's the kind of snack that disappears quickly, leaving everyone feeling happy and full. It’s perfect for a casual weeknight dinner, a game night snack, or even a simple lunch.

What I love most about this recipe is its adaptability. You can easily adjust the spice level to suit your preference. For a milder guacamole, you could reduce the amount of jalapeno or omit it altogether. If you want a spicier kick, add more jalapeno or even a pinch of cayenne pepper. Similarly, the type of tortilla you use can be easily adjusted. Corn tortillas provide a classic, slightly sweet flavor, but you could also experiment with flour tortillas for a different texture. The possibilities are endless!

The process of making the chips is surprisingly straightforward. The secret lies in the lime juice. Simply wetting your fingers with lime juice and rubbing them on the tortillas helps prevent them from getting too soggy during frying. This little trick makes a world of difference, ensuring perfectly crispy chips every time. I usually make a big batch on the weekend and store them in an airtight container. This way, I have a readily available, delicious snack throughout the week.

The guacamole is just as easy to make. I prefer to use Hass avocados for their creamy texture and rich flavor. Simply mash them with lime juice, salt, cilantro, red onion, and jalapeno until you achieve your desired consistency. I like mine slightly chunky, but you can mash it until it's completely smooth. Again, the adaptability of this recipe is a significant advantage. You can add other ingredients to the guacamole based on your preferences. Chopped tomatoes, diced bell peppers, or even a sprinkle of cumin would all make fantastic additions.

Making this dish has become a sort of ritual for me. The process of chopping the vegetables, mashing the avocados, and frying the chips is a meditative one. It's a moment of quiet amidst the chaos of daily life, a small act of self-care that nourishes not only my body but also my soul. And the best part? The joy on my family's faces when they see this colorful, flavorful snack is worth every minute spent in the kitchen.

So, next time you're looking for a quick, delicious, and healthy snack, give this Chipotle Lime Chips and Guacamole a try. You won't be disappointed. It’s a simple pleasure that brightens even the busiest of days. The vibrant colors and fresh flavors will transport you to a sunny afternoon, even if you're stuck inside battling a mountain of emails. And trust me, this dish is far more satisfying than another grab-and-go snack from the store.

Beyond the Recipe: This recipe isn’t just about the food; it’s about the moments shared while enjoying it. Picture this: a cozy Friday night, the aroma of freshly fried chips filling the air, the laughter of family and friends as they dip chips into the creamy guacamole. These are the memories we create around the table, the moments that nourish us just as much as the food itself. And isn't that what truly matters?

Step-by-step

    • Wet your clean fingers in lime juice and wipe across the tortillas. Let them sit out for five to ten minutes while you make the guacamole.
    • Cut the chips into six even triangles.
    • Heat your oil to 375 degrees. If you don't have a thermometer, drop one chip in the oil and if it comes to the surface bubbling the temperature is good.
    • Cook for 20-30 seconds, you aren't looking for them to brown.
    • Remove with a slotted spoon.
    • Sprinkle salt over them immediately.
    • To make the guacamole choose two nice ripe avocados that are dark green on the outside.
    • Cut avocados, remove pit and scoop out and into a bowl.
    • Add two teaspoons of lime juice and salt and mash together until smooth.
    • Add in the cilantro, red onion and jalapeno.
    • Mix well and serve with chips.
