Chicken Chili
This chili will keep you warm on cold winter nights. I created this basic recipe that can be altered in many ways. You could replace the chicken with ground beef, pork, turkey, or even boneless skinless chicken breasts. You can also add different beans and different vegetables. I love to top my bowl of chili with a dollop of sour cream and shredded sharp cheddar cheese. I hope you enjoy!

My Comforting Chicken Chili Recipe

My Go-To Chicken Chili: A Busy Mom's Secret Weapon

Life as a working mom is a whirlwind. Between juggling work deadlines, school pick-ups, and keeping the household running smoothly, finding time for anything, let alone cooking a delicious and healthy meal, feels like a monumental task. But I've learned a few tricks along the way to keep my family fed and happy, and one of those tricks is this incredibly versatile and flavorful chicken chili recipe. This isn't just another chili recipe; it's a lifeline on those hectic weeknights when I need something hearty, comforting, and quick to prepare.

The beauty of this chili lies in its adaptability. One week, I might use ground turkey for a leaner option, while another week, I might throw in some leftover shredded chicken from Sunday's roast. The vegetable selection is equally flexible. Sometimes I add bell peppers for extra sweetness, other times it's just the classic onion, carrot, and celery combo. And let's not forget the toppings! My kids love to pile on the shredded cheddar cheese, while I prefer a dollop of sour cream for a touch of tanginess. This chili is a blank canvas, perfect for customizing to your family's preferences and whatever ingredients you happen to have on hand.

But beyond its versatility, this chili is simply delicious. The rich blend of spices – cumin, chili powder, and a hint of jalapeño – creates a depth of flavor that's hard to resist. The tender chicken, combined with the hearty beans and juicy tomatoes, makes for a satisfying meal that's sure to please even the pickiest eaters. It’s also incredibly satisfying; perfect for a chilly evening or to warm you up after a long day. And the best part? It’s mostly hands-off cooking, meaning I can prep it and then let it simmer while I focus on other tasks, freeing up my valuable time. This chili isn’t just a meal; it’s a time-saver, a stress-reliever, and a testament to the fact that delicious, home-cooked meals are possible even amidst the chaos of daily life.

Beyond the Recipe: A Warm Embrace in a Bowl

This chili isn’t just about the ingredients; it's about the feeling it evokes. The aroma that fills the kitchen as it simmers is enough to melt away the stress of a long day. It's the kind of meal that brings people together, whether it's a cozy family dinner or a casual gathering with friends. It's the kind of food that reminds us of simpler times, of warmth, and of comfort. In a world that often feels hectic and overwhelming, this chili is a small act of self-care, a reminder to slow down, to nourish ourselves, and to appreciate the simple pleasures in life. And that’s something truly special.

Tips and Variations:

  • Spice Level: Adjust the amount of jalapeño to control the heat. For a milder chili, omit it altogether or use a milder pepper.
  • Bean Variety: Feel free to experiment with different types of beans. Kidney beans, black beans, or pinto beans would all be delicious additions.
  • Meat Alternatives: As mentioned earlier, ground beef, pork, or turkey are excellent substitutes for the ground chicken.
  • Vegetarian Option: Omit the meat entirely for a hearty vegetarian chili. Add some extra vegetables like mushrooms or zucchini to boost the volume and flavor.
  • Make it Ahead: This chili tastes even better the next day! Make a big batch on the weekend and enjoy leftovers throughout the week.

This chicken chili recipe is more than just a meal; it’s a warm hug in a bowl, a testament to the power of simple ingredients and a little bit of love. It's a reminder that even amidst the whirlwind of everyday life, there's always time for a little comfort, a little flavor, and a whole lot of love.

Step-by-step

    • Brown the ground chicken in a skillet. Set aside. Discard any accumulated liquid.
    • Chop the jalapeño, onions, carrots, and celery. Using a dutch oven or large soup pot, heat oil then add vegetables, salt, and cook until softened, about 5-7 minutes. Add cumin and chili powder.
    • Stir in tomato paste once vegetables are softened. Then add diced tomatoes, beans, chicken broth, and frozen corn.
    • Bring to nearly a boil and then reduce to a simmer. Let cook for approximately 25-30 minutes, until desired consistency.
