Step-by-step

    • Preheat oven to 180°C (350°F).
    • In a food processor, crush the caramel biscuits with the cocoa powder, add 15g of sugar and the melted butter until a homogeneous mixture is obtained.
    • Prepare the bottom of an 18cm springform pan with parchment paper.
    • Place the biscuit mixture on the bottom of the pan and press down with your fingers to create a uniform base.
    • Keep in the refrigerator and meanwhile prepare the Guinness batter.
    • Melt the chocolate and cream in a bain-marie and set aside.
    • Pour the Philadelphia into a large bowl and beat with an electric mixer for a few minutes.
    • Add the sugar, the melted (but cooled) chocolate and cream, the sour cream, the vanilla seeds and mix with the electric mixer.
    • Add one egg at a time and mix, finish by adding the Guinness and mix.
    • Pour the mixture into the pan and bake for 50-55 minutes, check with a toothpick that the mixture is cooked, but keep in mind that it is still a "moist" cake.
    • Leave the cheesecake in the switched-off oven with the door slightly open for at least an hour.
    • Once completely cooled, refrigerate for a whole night before serving.
    • You can accompany this cheesecake with whipped cream and, if you like, some berries, or with simple vanilla ice cream.
    • I assure you, however, that it is also good without adding anything!
