Step-by-step

    • Lightly brush both sides of bread with olive oil.
    • Turn on the broiler.
    • Put the prepared bread on a parchment lined cookie or baking sheet, place it under the broiler, and toast both sides of the bread.
    • Toss arugula with a bit of olive oil. You can skip the arugula if making the kumquat version.
    • Using a spoon, scoop out the avocado onto the bread.
    • Take a fork and smash the avocado onto the bread, making sure to cover all of the bread.
    • Top the avocado with the arugula, sliced egg and a bit of coarse sea salt for the arugula and hard boiled egg version!
    • Top the avocado with the sliced kumquat, a bit of coarse sea salt and a drizzle of olive oil for the kumquat version.
    • You can even add a bit of parmesan or goat cheese to this version.
    • Super easy, tasty and delicious! Eat the toast alone, or pair it with a salad or soup.
