Cammie's Lasagna: A Weeknight Wonder

Let me tell you, friends, there’s nothing quite like the comforting aroma of lasagna bubbling in the oven. That rich, cheesy scent is enough to make anyone's day a little brighter. And for me, a busy working mom, finding a delicious and satisfying dinner that isn't a complete time sink is a true blessing. This Cammie's Lasagna recipe fits the bill perfectly. It's simple enough for a weeknight meal, yet elegant enough to impress guests. It's the kind of recipe that’s become a staple in my household – a reliable, crowd-pleasing dish that always delivers.

The beauty of this lasagna lies in its simplicity. No fancy ingredients, no complicated techniques – just good, honest food. I've streamlined the process to make it as efficient as possible, perfect for those evenings when you’re juggling work deadlines, school pick-ups, and everything else that comes with modern life. The combination of rich meat sauce, creamy ricotta, and layers of melted mozzarella is a classic for a reason. It’s a symphony of flavors and textures that always leaves my family wanting more. I often double the recipe to have leftovers for lunch throughout the week. This lasagna is equally enjoyable warm from the oven or cold from the fridge; it’s that versatile.

Beyond the convenience and deliciousness, this lasagna also holds a special place in my heart. It reminds me of family dinners, cozy evenings, and the simple joy of sharing a good meal with loved ones. The act of layering the ingredients, each step contributing to the final masterpiece, is almost meditative. It's a chance to disconnect from the day's stresses and focus on something enjoyable and rewarding – and the end result? A dish that is as heartwarming as it is delicious. It's more than just a recipe; it's a memory in the making.

Ingredients:

  • 1 egg
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 6 slices mozzarella cheese
  • 1/2 cup parmesan cheese
  • 8 ounces lasagna noodles
  • 15 ounces ricotta cheese

Beyond the Recipe: A Little Something Extra

This lasagna isn't just about the recipe; it's about the memories. I find cooking to be a very therapeutic process. The rhythmic chopping, the satisfying sizzle of the meat, and the comforting warmth of the oven – these are the small moments that bring me joy and connect me to something larger than the day-to-day grind. And while I’m grateful for all the conveniences of modern life, there's something deeply satisfying about creating a meal from scratch, something that speaks to my soul. The simple act of feeding my family is an expression of love and care, and this lasagna is a testament to that.

I often find myself adapting this recipe, adding or subtracting ingredients based on what I have on hand or what my family is craving. Sometimes I add spinach or mushrooms to the ricotta mixture for extra flavor and nutrients. Other times I use different types of cheeses, experimenting with combinations until I find the perfect blend. The beauty of cooking is its adaptability; it's a journey of experimentation and discovery.

So go ahead, try this recipe. Let the comforting aroma of baking lasagna fill your kitchen. Share it with your loved ones, create memories around the table, and savor every delicious bite. Because in the end, it’s not just about the food; it’s about the connection, the love, and the simple joy of a well-cooked meal. It’s the essence of home.

Step-by-step

    • Heat water in large pot for cooking lasagna noodles.
    • While doing this, brown ground beef in large skillet.
    • Drain fat.
    • Add spaghetti sauce to ground beef.
    • Add garlic, cover, and simmer sauce.
    • By now water should be boiling; add lasagna noodles and cook according to package instructions (boil about 8 minutes).
    • In medium bowl, mix ricotta cheese, beaten egg, and 1/4 cup parmesan cheese.
    • When noodles are done, drain them and assemble lasagna: Spread as small amount of sauce as possible over bottom of an 11x7 inch pan (I use glass).
    • Layer 1/3 of the noodles, then 1/2 of the ricotta mixture, then 1/3 of the sauce, then 4 ounces sliced mozzarella cheese.
    • Repeat.
    • Top with the remaining sauce, and sprinkle with as much shredded mozzarella and parmesan cheese as desired.
    • Trim any ends of noodles that stick out.
    • Bake at 350? for about 30 minutes or until cheese is slightly browned and casserole is bubbly.
    • Remove from oven and let stand for 15 minutes.
    • Cut in squares and serve.
