A Simple, Flavorful Ground Beef Taco Recipe

My Go-To Ground Beef Tacos: A Quick & Easy Weeknight Meal

As a busy working mom, finding time to cook a healthy and delicious dinner can feel like a monumental task. But I’ve discovered that simplicity doesn't mean sacrificing flavor! These ground beef tacos are my go-to weeknight meal – they're quick, easy, and incredibly satisfying. The best part? They're customizable to everyone's preferences, making them a hit with the whole family (even the picky eaters!).

This recipe is all about building layers of flavor. The spice blend is a simple yet effective combination that complements the richness of the ground beef perfectly. I love using grass-fed beef for its superior taste and nutritional value; the slight gaminess adds another dimension to the dish. And don't even get me started on the toppings! The fresh cilantro, diced tomatoes, red onion, jalapeño, and creamy avocado create a vibrant and refreshing contrast to the savory meat. The crunchy Must B Nutty tortillas add a delightful textural element, holding all the delicious components together.

This recipe is so versatile! You can easily adapt it to your dietary needs and preferences. Feeling adventurous? Try swapping out the ground beef for shredded chicken or seasoned black beans for a vegetarian twist. Or, if you're short on time, use pre-shredded lettuce and pre-cut veggies to save some prep time. The possibilities are endless!

Beyond the Recipe: Weeknight Cooking Strategies

This recipe is more than just a meal; it's a testament to the power of efficient meal prepping. Here are some tips I've learned to make weeknight cooking less stressful:

  • Prep Ahead: I often chop my vegetables on the weekend and store them in airtight containers in the refrigerator. This drastically reduces prep time during the week.
  • Embrace Leftovers: Don't be afraid to embrace leftovers! These tacos are just as delicious the next day, making for a quick and easy lunch or dinner.
  • Keep it Simple: Don't overcomplicate things! Sometimes, the simplest recipes are the most satisfying. This recipe proves that you don't need a lot of fancy ingredients to create a delicious and flavorful meal.
  • Get the Family Involved: Make it a family affair! Involving my kids in the cooking process teaches them valuable life skills and makes meal prep more enjoyable for everyone.

More than Just Tacos: A Taste of Tradition

For me, cooking isn't just about sustenance; it's about connection. This recipe is a reminder of simpler times, of family gatherings around a table piled high with delicious food. Step-by-step

    • Dice the tomato, a few tablespoons of cilantro, red onion, jalapeño, avocado and lettuce and set aside. These will be used as your garnish.
    • Combine chili powder, cumin, salt, paprika, coriander and cayenne in a small bowl and set aside.
    • Dice the yellow onion and sauté on medium in 1 tablespoon of baking fat or other cooking fat. Sauté until slightly browned and translucent.
    • Add ground beef and spices and mash well so that it resembles taco meat.
    • Cook until meat is fully cooked - no red visible. (The meat will taste very seasoned, this is okay! Once you combine it with the other ingredients it will even out the flavor).
    • Place a few Must B Nutty tortillas in a dry pan and cook for a minute or so on each side until they are warm and slightly browned.
    • Place tortillas on a plate and fold them gently in half.
    • Place your meat in the tortillas and top with your garnishes & freshly squeezed lime.
